SPANISH OMELETTE

Ingredients

5 eggs
1 tablespoon oil
1 medium onion, cut into strips
2 medium potatoes, peeled and sliced
Salt to taste

Method

1. Beat eggs till fluffy.
2. Preheat oven to 180º C.
3. Heat oil in an oven proof non-stick pan. Add onion and sauté till lightly browned.
4. Add potatoes and salt, mix and sauté for 1-2 minutes. Pour beaten eggs and spread well.
5. Put pan in the preheated oven and bake till the eggs are fully done.
6. Cut into wedges and serve hot.
