Sev Burfi | सेव बर्फी | Sanjeev Kapoor Khazana

This unique Barfi is made with crispy sev melted in sugar syrup, topped with loads of nuts- best for your next upcoming festival.



1 cup sugar
250 grams unsalted sev
2 tsps + 1 cup milk
2¾ cups khoya/mawa
2 tbsps chopped pistachios
2 tbsps chopped almonds
2 tbsps chopped cashew nuts
1 tsp rose essence
½ tsp green cardamom powder
2 tsps ghee
Slivered pistachios for garnish
Slivered almonds for garnish
Dried rose petals for garnish


1. Heat a non-stick wok, add sugar and 1½ cups water and mix well. Cook till the sugar melts.
2. Add 2 tsps milk and discard the scum. Add sev and gently mix. Add khoya and mix well. Cook till khoya melts.
3. Add remaining milk and mix well, cook till the mixture thickens.
4. Add pistachios, almonds, cashew nuts, rose essence and green cardamom powder and mix well.
5. Add ghee, mix and cook for 2 minutes. Take the pan off the heat.
6. Transfer the mixture into greased burfi tins. Grease a palate knife, spread and press the mixture evenly to level the top.
7. Sprinkle slivered pistachios, slivered almonds, and dried rose petals and press them gently and set aside to cool down completely.
8. Cut into squares and serve.
