Semolina Gujya:
Ingredients:
Grated coconut 1 cup
Semolina 1/2 cup
Raisins 10
Oil 1 cup
Flour 100 gm
Caster sugar 1/2 cup
Green cardamom powder 1 tsp
Cashews 10
Clarified butter 1/2 cup
Method:
Mix flour with 1 tbsp oil or ghee. Add water as needed to make the dough. Rest for 1/2 hour. To prepare the stuffing, mix grated coconut, caster sugar, raisins, chopped cashew nuts, cardamom powder, and semolina. Knead the dough well and make small balls so as to make poori. Roll out thin pooris. Take a gujiya mold and place the poori in the mold. Put a spoonful of stuffing in the center of the poori. Press it gently. Take out the dough from the sides of the mold. Repeat with other balls and stuffing. Cover it so that the gujiya will not dry. Next, heat oil and ghee in a Kadhai. Deep fry gujiya till light brown in color both sides.

Umm Ali:
Ingredients
Croissants cut into small pieces 5-7
Raisins 3 tbsp
Desiccated coconut 3 tbsp
Flaked almonds, toasted 3 tbsp
Pistachio nuts, cracked 3 tbsp
Condensed Milk 1 tin
Vanilla essence 1 tsp
Water 4 cups
Cream whipped 1 cup
Method:
Combine croissant pieces, raisins, coconut, almonds and pistachios in a baking dish. Boil Condensed Milk , vanilla and water in a saucepan and pour immediately over the croissant mixture in the baking dish and set them aside for 5 minutes or until croissants absorb the maximum of the liquid. Place whipped cream in a piping bag and pipe the cream over the prepared mixture in the baking dish. Place the baking dish in a preheated oven at 200°C using the grill part of the oven and grill for 5 minutes or until the cream topping is golden color. Serve it immediately.

Chocolate Cookies:
Ingredients:
Flour 150 gm
Semolina 100 gm
Icing sugar 170 gm
Coco powder 4 tbsp
Baking powder 2 tsp
Butter 200 gm
Chocolate chips ½ cup

Method:
Preheat the oven on 200 c. In a bowl mix flour, semolina, icing sugar, coco powder, baking powder and butter. Mix well. Now add chocolate chips and fold properly. Then make small balls. Now grease the baking tray with butter and place cookies. Now bake it on 200 c for about 18 minutes. Remove and cool. Serve.
