I do wish there were text overlays explaining how much cooking time was cut out during editing. As it is, it makes it look like the "Secret of Risotto" is illusionist slight-of-hand, because there's no way one could cook that rice to an edible texture in one minute flat.
You eat risotto with fork, not spoon, once you understand that, maybe you catch up, creamy is not the word you have to use … and adjust the recipe and … use deep plate!
