4 boneless skinless chicken breasts, cut into strips
zest and juice of 1 lemon
1 tsp dried or a few sprigs of fresh thyme
3 tbsp oil
150g bag of mixed salad leaves or 2 heads of Little Gem, pulled apart
1 small red onion, halved and thinly sliced
squeeze of garlic paste or 1 garlic clove, crushed
handful pitted black olives, halved

Make it no-cook
Pull 4 cooked chicken breasts (or one whole rotisserie chicken) into bite-size pieces and mix with the olives, salad leaves and onions. Whisk together the lemon zest and juice, thyme, oil and garlic paste. Season and drizzle over.

Direction

Put the chicken pieces into a bowl, add the lemon zest, thyme, plenty of black pepper and salt to taste, then mix well with your hands. Heat 1 tbsp oil in a pan then fry the chicken for 8-10 mins, until golden and cooked through. Meanwhile, spread the leaves and onion over a large platter or in a big salad bowl. Add the garlic paste and olives to the pan, then fry for 1 min more. Spoon the chicken and olives onto the leaves. Take the pan off the heat then add the rest of the oil and lemon juice. Stir together well, scraping off any bits from the bottom of the pan. Check the seasoning, then pour over the chicken and salad. Serve with crusty bread.

Pour the cream into a pan and heat until just steaming, but not boiling. Put the chopped chocolate and butter in a bowl, pour over the hot cream, and stir until smooth. Add the golden syrup, mint extract and chilli. Chill until firm, about 2 hrs. Using a melon baller roll into 1 tsp balls. Roll the balls in chopped almonds and set on a tray. Leek & bacon soup

Heat a large saucepan, then fry the leeks and bacon over a medium heat for 5 mins, until the bacon is crisp and the leeks have started to soften. Pour in the stock and stir in the rosemary with some seasoning. Bring to the boil, then simmer for 5 mins. Tip in the pasta of your choice and continue to cook for about 10 mins until the pasta is ‘al dente’. Serve with warm, toasted ciabatta.

Halve the onion, then cut each half into crescent moon-shaped wedges about 2cm thick at the thickest part. Heat the oil in a casserole dish. Cook the onion until soft and pale gold, then add the garlic, chillis and ginger, and cook for 2 mins more. Stir in the coconut cream, stock and some seasoning. Heat carefully, but don’t let it boil.

Add the pumpkin and potato, season again, then add the coriander stalks. Simmer until the pumpkin and potatoes are tender. Use a wooden spoon to squash some of the pumpkin if you want to to thicken the stew a little, but don’t break it down too much (you don’t want a purée).

Add the prawns and spinach. Cook gently until the prawns are opaque, about 3 mins. Stir in the lime juice, sugar and fish sauce. Taste the stew, then adjust the flavour with more lime or fish sauce as needed. Roughly chop the coriander leaves, then stir them through. Top each portion of the stew with some sliced red chilli, and serve with lime wedges on the side.
