Recipe Description

This Vegan Fry-Up brings all the flavor and satisfaction of a classic English breakfast—without the animal products. Loaded with sautéed mushrooms, crispy potatoes, tofu scramble, grilled tomatoes, beans, and toast, this plate is hearty, vibrant, and perfect for a power-packed brunch.

Nutritional Ingredients

  • 1 cup canned baked beans (check for vegan)
  • 1 block firm tofu, drained and crumbled
  • 1/2 tsp turmeric
  • 1/2 tsp black salt (kala namak) (for eggy flavor, optional)
  • 1 tbsp nutritional yeast
  • 1 tbsp olive oil
  • 4-5 small potatoes, chopped and parboiled
  • 1 cup mushrooms, sliced
  • 2 medium tomatoes, halved
  • 1 handful baby spinach
  • 2 slices sourdough or wholegrain bread, toasted
  • Salt & pepper to taste
  • Optional toppings: avocado slices, hot sauce, fresh herbs

Cooking Instructions

  1. Heat half the olive oil in a skillet. Add the parboiled potatoes and cook until golden and crisp. Season with salt and pepper.
  2. In another pan, sauté mushrooms in a bit of oil until browned. Set aside.
  3. Grill or pan-sear the tomatoes, cut-side down, until lightly charred.
  4. Warm the baked beans in a small saucepan.
  5. In a pan, heat remaining oil and add crumbled tofu. Stir in turmeric, nutritional yeast, and black salt. Cook for 5–7 minutes until heated through.
  6. Add spinach to the tofu scramble in the last minute to wilt slightly.
  7. Toast the bread to your liking.
  8. Plate everything together: crispy potatoes, tofu scramble, beans, mushrooms, tomatoes, toast, and optional toppings.

Can I make this oil-free?
Yes. Use a non-stick pan and water sauté the tofu, mushrooms, and potatoes.

What kind of tofu is best for scramble?
Firm tofu is best—it holds texture and absorbs flavor well.

Put the flour in a large bowl, then stir in the yeast and a large pinch of salt. Make a well in the centre, pour in 175ml warm water and the oil and bring together with a wooden spoon to make a soft, fairly wet dough. Turn out onto a lightly floured surface and knead for 5-8 mins until smooth. Divide the dough into four balls and arrange on a floured tray, well spaced apart. Cover with a tea towel and set aside for about 40 mins-1 hr until doubled in size.

Heat the oven to 240C/220C fan/gas 8 and put a baking tray in the oven to heat up. Roll the dough balls out on a floured surface into long baguette sticks about 22-25cm long, place on the hot tray and bake for 10-12 mins until puffed up and golden, then leave to cool. Can be made a few hours ahead of baking.

To assemble, split the bread down one side and neatly layer in the tomato, ham, mozzarella and rocket, if using. Mix the pesto with the olive oil, drizzle over, halve and serve.
