FAQs
Can I make this oil-free?
Yes. Use a non-stick pan and water sauté the tofu, mushrooms, and potatoes.
What kind of tofu is best for scramble?
Firm tofu is best—it holds texture and absorbs flavor well.
Is black salt essential?
No, but it gives the tofu an “eggy” taste that mimics scrambled eggs.
Can I prepare this in advance?
You can prep the scramble and potatoes ahead of time and reheat before serving.
