Hiya! Today we will discuss about Tso Orange Chicken

Ingredients:

Boneless chicken 500 gm
Salt 1 pinch
Corn starch 1/3 cup
Oil for deep fry
Oil 1-1/2 tbsp
Ginger 3 slice
Garlic 1 clove
Dried red chilies 4-5
Scallion 2

For Sauce:

Chinese rice vinegar 2-1/2 tbsp
Soya sauce 2-1/2 tbsp
Dark soya sauce 1/2 tbsp
Hoisin sauce 1 tsp
Water 1/4 cup
Orange marmalade 2-1/2 tbsp
Corn starch 1 tbsp

Method:

Marinate chicken with salt for 30 minutes.
Then all sauce ingredients nicely in small bowl.
Then coat chicken with corn starch and deep fry until golden brown.
Then heat oil in pot, add ginger, garlic and red chilies and stir fry it.
Now add sauce, when sauce is thick, add chicken and stir fry with sauce.
Then add scallions, stir fry for few minutes, take out in dish and serve.

Cook the edamame in a small pan of boiling water for 2-3 mins. Drain, then rinse under cold running water and drain again.

Combine the lime zest and juice, the peanut butter, soy sauce, honey and some seasoning in a large bowl to make a dressing, adding a splash of water if needed to loosen. Add the edamame, shredded cabbage, sliced pepper and shredded turkey to the bowl and toss everything together until well-coated.

Tip the salad onto a platter, then scatter with the coriander and clementine slices. Gently mix these into the salad with salad servers, being careful not to break the fruit up too much. Scatter over the peanuts just before serving.

The ultimate makeover: Chicken Caesar salad

Marinate the chicken. Mix the lemon juice, oil, thyme and garlic in a shallow dish. Add the chicken and turn it over in the marinade to coat well. Season with freshly ground pepper and leave for up to 2 hrs. Heat the oven to 200C/fan 180C/gas 6. Slice, then cut the bread into big, rough cubes for the croutons. Spread them in a single layer on a baking sheet, then brush all over with the 2 tbsp oil. Bake for about 10 mins until golden and crisp. Meanwhile, put the garlic into a mini blender with the mustard, Worcestershire sauce, lemon juice, chilli and anchovies. Blend until smooth, add the mayonnaise and yogurt, then blend again – it should be the consistency of double cream. Adjust the taste with lemon juice and pepper. If necessary, thin with a couple of tsps of cold water to get the consistency right so it will coat the leaves. Heat a griddle pan until very hot. Lay the chicken on the griddle, on the side that had the skin on. Cook for 15-16 mins, turning once or twice, until cooked through. Remove, then let the meat sit for 5 mins before slicing. Keep any small inner lettuce leaves whole, tear the larger outer leaves into 2-3 pieces, then put them all into a large bowl with the rocket or watercress. Pour just under half the dressing over the leaves and carefully toss to coat – it’s gentler to use your hands. Either assemble in the bowl, or pile the leaves onto individual plates, tucking in the croutons, chicken and Parmesan. Drizzle the rest of the dressing over and around, then finish with an extra squeeze of lemon.

Courgette & cheddar cornbread

Heat the oven to 220C/200C fan/gas 7. Butter a 900g loaf tin and line with a wide strip of baking parchment. Mix the flour, polenta and baking powder in a bowl with 1 tsp of salt.

Whisk the eggs, milk and melted butter in a jug. Pour into the dry ingredients and mix together. Stir in the cheese and courgettes. It will be quite runny at this stage but don’t worry, as the polenta gradually swells and soaks up the liquid in the oven.

Pour into the prepared loaf tin and bake for 15 mins, then turn the oven down to 200C/180C fan/gas 6 and cook for another 25-30 mins or until a skewer inserted in the middle of the loaf comes out clean (you can cover the top loosely with foil if starts to get dark too quickly).

Leave to cool completely in the tin, then turn out and slice.

Vitality chicken salad with avocado dressing

Blanch the soya beans for 3 mins. Rinse in cold water and drain thoroughly. Put the chicken, beans and cucumber in a bowl. Blitz the avocado, Tabasco, lemon juice and oil in a food processor or with a hand blender. Season, pour into the bowl and mix well to coat. Spoon the mixture into the lettuce leaves (or serve it alongside them) and sprinkle with the seeds. Chill until lunch, then serve with a lemon wedge.
