1 lb or (450 gm) mutton or lamb
1 tsp fresh ginger, grated
3 cloves garlic
Salt and pepper
½ teaspoon turmeric powder
4 pods cardamom
2 cinnamon sticks, 4 cloves
12 oz (350 gms) onions, sliced thick
12 oz (350 gms) tomatoes, sliced thick
12 oz (350 gms) coriander, chopped
2 tablespoons mint, chopped
3 oz (75g) Oil


Remove any fat from the meat and mix the meat in a bowl with ginger, garlic, salt, pepper, turmeric, cardamom, cinnamon and cloves.
Marinate for 1 hour.
Spread the mutton in a wide flameproof, ovenproof dish and top with the sliced onions, then the sliced tomatoes and then the potatoes. Sprinkle with coriander and mint.
Heat oil and pour it over the top.
Cover and cook on a stove for 10 minutes. Then bake in an oven for 1 to 1 ½ hours in a low oven 170 C/325 F or gas 3 or bake until the meat is tender and the vegetables are cooked.
Serve hot

Smoky chicken skewers

You need 15 skewers: if wooden, soak in water for 10 mins. Cut chicken into 3cm pieces and place in a bowl. Add 1 tbsp olive oil, the spices, garlic and vinegar, toss well and season. You can do this up to a day before and refrigerate. Thread 2-3 pieces on each skewer. Pour remaining oil in a frying pan or rub onto a griddle pan. Get the pan hot and sear the chicken for 3-4 mins on each side – you may have to do this in batches, keeping the cooked skewers warm in a low oven. Serve with smoky aïoli if you like.


Slow cooker lasagne

Heat the slow cooker if necessary. Heat the oil in a large non-stick pan and fry the onions, celery, carrots and garlic for 5-10 mins, stirring frequently until softened and starting to colour. Tip in the meat and break it down with a wooden spoon, stirring until it browns. Pour in the tomatoes with a quarter of a can of water, the tomato purée, bouillon, balsamic vinegar, thyme and plenty of black pepper, return to the boil and cook for 5 mins more.

Spoon half the mince in the slow cooker and top with half the lasagne, breaking it where necessary so it covers as much of the meat layer as possible. Top with the rest of the meat, and then another layer of the lasagne. Cover and cook on Low while you make the sauce.

Tip the milk and flour into a pan with the bay leaf and nutmeg and cook on the hob, whisking continuously until thickened. Carry on cooking for a few mins to cook the flour. Remove the bay leaf and stir in the cheese. Pour onto the pasta and spread out with a spatula, then cover and cook for 3 hours until the meat is cooked and the pasta is tender. Allow to settle for 10 mins before serving with salad.
