Strawberry Ice Cream

Ingredients
Milk 1 liter
Egg yolk 6
Corn flour 3 tbsp
Sugar 1, 1/2 cup
Vanilla essence 1 tbsp
Olpers Cream 600 ml
Egg white 6
Strawberry puree as required (wash and blend in the blender then cook in a frying pan for a while)
Strawberry essence few drops
Red food color few drops
For Garnishing:
Wafers for serving
Jelly (different colors)
Waffles for serving
Cherries as required
Chocolate sauce for serving
Strawberry sauce for serving
Praline to sprinkle
Fruit cocktail for serving
Mint leaves for garnish
Colored sprinkles as required
Crushed corn flakes as required

Cooking Directions
On normal room temperature take milk in a pan and add sugar, vanilla essence, whisked egg yolks, corn flour and mix well with a whisk. Make sure that no lumps remain in the mixture.

Now put on stove on medium heat and constantly stir.

Its consistency should be thick. It is also known as vanilla custard.

Add half teaspoon “stabilizer powder” (like gelatin powder) to make crystal free ice-cream. It’s optional.

Remove from stove and cool the mixture.

Take fresh cream and whisk it. Add to the mixture when its on room temperature and mix well. Stir constantly.

Stiffly beat egg whites and make foam.

Add egg white to the mixture and fold. Or mix with a whisk.

Add strawberry puree and strawberry essence (less than half tsp) and mix. Add food color if required.

You can add nuts or whatever if you want.

Pour mixture in bowl that you will place in the freezer or you can make it in ice cream maker.

If you do not have ice cream maker, make in the freezer.

Put the mixture bowl in the freezer and wait for 5-6 hours.

After 5 hours takeout the bowl and beat the ice cream till its consistency becomes the same as it was before freezing.

Again put the bowl in freezer and wait for 6 hours. And beat it again.

Repeat the procedure at least for 3 times. Every time beat the ice cream for 10 to 12 minutes, and then freeze.

To make fried ice cream, take a proper firm round shape ice cream scoop and within seconds coat it with the crumbs and deep fry in the very high temperature oil. This has to be done within few seconds.

Make sure that the ice cream scoop is not soft and the oil is extremely hot.

You can give the fried effect at home also with the help of corn flakes.

With hands crush the flakes and roll the scoop in that. And at the top garnish with the Olpers cream with icing sugar added, garnish and serve.

Classic meatloaf with tomato sauce

Heat the oil in a frying pan and add the onion, cook for 4-5 mins over a low heat, then stir in the garlic. Leave to cool completely.

To make the tomato sauce, heat the oil in a saucepan and fry the onion, carrot and celery for 3-4 mins, then add the garlic and cook for a minute. Add the passata and bring to a simmer, then season and cook for 5 mins.

Heat oven to 180C/160C fan/gas 4. Mix the cooled onion with the tomato purée, mince, egg and breadcrumbs, and season. Line a 900g loaf tin with a liner or baking parchment and pack in the meatloaf mixture. Cook for 20-25 mins or until a skewer poked into the centre feels roasting hot when pulled out. Leave to rest for 10 mins before lifting out of the tin.

Serve slices of the meatloaf with some tomato sauce spooned over. Wrap any remaining meatloaf and use it as a sandwich filling for a lunchbox. Can be frozen for up to a month.

Smoky rashers & tomatoes on toast

Heat a non-stick pan or griddle and spray or rub with a little oil to lightly grease it. Cook the turkey rashers and tomatoes for a couple of mins each side. Meanwhile, toast the bread, spread with mustard and squash half an avocado on each. Add the turkey rashers, tomatoes and rocket, and serve hot.

Classic spaghetti Bolognese

Heat 1 1/2 tbsp oil in a large pan or flameproof casserole dish over a low-medium heat. Add the onion, celery and carrots with a pinch of salt. Cook for 10 mins, stirring occasionally, until softened but not coloured. Transfer to a plate using a slotted spoon.

Pour the remaining oil into the pan, increase the heat and tip in the pancetta. Cook for 3-4 mins until golden. Add the mince and chicken livers, and cook for a further 5 mins until browned, breaking down the mince with the back of a wooden spoon.

Return the vegetables to the pan and add the bay leaf and tomato purée. Cook for a 1 min more and mix well. Pour in the wine and reduce by half. Add the stock and passata with some seasoning and bring to the boil. Reduce the heat to medium and let the sauce bubble away for 35-40 mins, stirring occasionally, until reduced by half and you are left with a thick ragu.

Bring a large saucepan of salted water to the boil 15 mins before the sauce is ready. Drop in the pasta, cook following pack instructions until al dente, then drain.

To finish the sauce, stir in the milk and season to taste. Tip the pasta onto a plate and top with the Bolognese. Serve with the Parmesan.

Heat half the oil in a frying pan and add the finely chopped onion. Cook until softened and slightly browned, about 10 mins. Add the garlic and stir for 1 min. Set aside to cool a little. Put the mince in a large bowl and tip in the cooked onion and garlic. Season generously and mix together with your hands.

Roll the mince into eight meatballs, then freeze half for another meal, if you like (defrost in the fridge before cooking). Heat oven to 200C/180C fan/gas 6. In the same pan, fry the meatballs with the remaining oil for 1-2 mins until browned.

Transfer the meatballs to a roasting tin with the sliced onion, balsamic vinegar, stock and Worcestershire sauce. Bake for 20 mins until the meatballs are cooked and the onions are tender. Halve the ciabatta and bake for 2 mins to warm through.

Pour some of the gravy and onions onto one side of the ciabatta, add the meatballs and layer over the cheese. Add more onion gravy to melt the cheese. Serve with mixed leaves, if you like.
