Spicy Zinger Burger

Ingredients

  • Mince meat 300 gm
  • Onions 1 (chopped)
  • Green chilli 2
  • Red chilli powder 1 tsp
  • Black pepper 1 tsp
  • Mustard Paste 1 tbsp
  • Egg 1
  • Plain flour 2 tsp
  • Salt 1/2 tsp
  • Soya sauce 1 tbsp
  • Chilli sauce 1 tbsp
  • Bun 4
  • Tomatoes 2 (sliced)
  • Salad leaves as required
  • Cucumber 1 (sliced)
  • Oil for frying
  • For Sauce:
  • Mayonnaise 2 tbsp
  • Tomato ketchup 4 tbsp
  • Vinegar 1 tbsp
  • Chilli garlic sauce 2 tbsp
  • Salt a pinch
  • Red chilli 1/2 tsp (crushed)

Cooking Directions

  1. For Sauce: Mix tomato ketchup, mayonnaise, chilli garlic sauce, red chilli crushed, vinegar and salt in a bowl.
  2. Put the minced meat, green chillies, and chopped onions in a chopper and mix well.
  3. Now add plain flour and blend again.
  4. Now add red chilli powder, black pepper, mustard paste, salt, soya sauce, chilli sauce, and eggs.
  5. Mix all the ingredients well.
  6. Shape the chicken into kebab shape and fry in oil.
  7. Now take a bun and cut in centre and pour sauce.
  8. Then add salad leaves, kebab, tomato slice, cucumber and little sauce on first bun and then top the other bun on upside.

Special Crispy Chicken Burger Recipe

In a bowl, add vinegar, mustard paste, oyster sauce, chicken, chili sauce, broast masala and mix it well and marinate for an hour. In a bowl, add maida, corn flour, rice flour, red chili powder, black pepper powder, salt, baking powder, garlic powder and mix it well. In a bowl, add milk, egg and mix it well.

Chicken fajitas with avocado & Caesar dressing

Slice the chicken on a board with a sharp knife, then put in a large bowl. Grate in the lime zest and squeeze in the juice. Crush the garlic, then add to the chicken with the ground coriander, chilli powder (if using) and seasoning to taste. Stir well, cover, then chill until ready to cook. You could do this the night before. On a clean chopping board, and using a clean knife cut the avocado into quarters. Ease the quarters away from the stone, then peel off the skin. Slice or chop the flesh. Thinly slice the lettuce. Halve the pepper, remove seeds and stalk, then slice or chop the flesh. Chop the fresh coriander, then stir it into the chicken. Heat the oil in a wok or large frying pan. Add the pepper, then stir, continuously, over a high heat for 2 mins. This is called stir-frying. Add the chicken, then stir-fry over a high heat for 5 mins until the chicken is cooked. Heat a large, dry frying pan until hot, then add the tortillas one at a time to heat and brown a little. Turn them over with tongs so that both sides are warmed. Take a warm tortilla and spread with some Caesar dressing. Add some lettuce and avocado, then some of the chicken and pepper mixture and a little more Caesar dressing if you like. Fold in the sides of the tortilla, then carefully roll up so that the filling is completely enclosed. Alternatively, put the dishes of the salad, chicken and tortillas on the table for the family to make up their own.

Carrot & cheddar soup with toast soldiers

Melt the butter in a large saucepan over a low heat and tip in the onion, carrots and potato. Fry gently for about 10 minutes, stirring from time to time, until the onion is soft and the vegetables are glistening. Pour in the stock and bring to the boil, then reduce the heat and partially cover the pan. Simmer for about 20 minutes, until the vegetables are soft. Whizz the mixture in a food processor or blender until smooth (a blender will give a smoother texture), then add the cheese and whizz again. Return the soup to the pan, pour in the milk, then reheat gently and taste for seasoning. Serve the soup with buttered toast soldiers.

Prawn cocktail cups

To make the Marie Rose sauce, blend the mayonnaise with the ketchup and a couple of shakes of Tabasco in a bowl. Trim the bases of the lettuce hearts, discard the outer leaves and separate the leaves – they need to be about 10cm long and you want about 24 in total. Reserve the tiny hearts for another salad. Wash the prawns and pat dry between double layers of kitchen paper. Toss in a bowl with the olive oil, lemon juice, parsley and a little seasoning. Lay the leaves out on serving plates, cup-side up. Drop several prawns into each. Dollop ½ tsp sauce on top, then scatter over some mustard and cress. These can be prepared 1 hr in advance, in which case cover with cling film and set aside in a cool place.
