1 medium potato; diced
1 medium onion; chopped finely
2 tomatoes; blanched, peeled and chopped finely
1/2 cup chopped chives
2 cloves garlic; minced
1 inch ginger; grated
2 chilies; chopped finely
1 tbsp coriander / cumin powder
1/2 tbsp turmeric
3 eggs; beaten
1/2 cup chopped coriander leaves
salt – to taste
2 tbsp olive oil


Heat oil, and sauté the potatoes until cooked, remove and set aside.
Fry the onions until golden brown, add garlic, ginger and tomatoes. Fry for a few minutes.
Add cumin/coriander and turmeric powder, stir and fry for 1 minute.
Add potatoes, salt, chives and stir and cook for A minutes.
Add eggs, stir until cooked.
Add coriander, mix and serve hot.
