Whole chicken 1
Onion diced 1
Carrot diced 1
Spring onions 2
Butter 3-4 tbsp
Red chili powder 1 tbsp
Cumin powder 1 tbsp
Turmeric powder 1/2 tbsp
All spice 1 tbsp
Ginger chili paste 2 tsp
Dried fenugreek seeds as required
Salt and black pepper to taste
Brown sugar 1/2 tsp
Add red chili powder, cumin powder, turmeric powder, all spice, ginger chili paste, fenugreek seeds, salt, black pepper and brown sugar in bowl and mix it nicely.
Put chicken in mixture and put some butter on it.
Marinate chicken with mixture nicely.
After marinating for 1 hour or preferably overnight, put onion, carrot and spring onion in roasting tray or baking dish.
Put chicken over vegetable bread.
Roast chicken for 45 minutes at 180 degrees C or till done.
