Ingredients:

  • Egg white 3
  • Chicken 250 gram
  • Olive slices 4 tbsp
  • Lemon 2
  • Red chili ½ tsp
  • Oregano ½ tsp
  • Thyme ½ tsp
  • Salt to taste
  • Black pepper to taste
  • Mozzarella cheese as required

For garnish:

    • Fresh coriander as required
    • Green chili 1-2
    • Mint leaves a few

METHOD:

Whisk egg white till it becomes foam. Add red chili, thyme, and oregano, salt and mix well. Marinate chicken with salt and lemon juice and then stir fry. Heat oil in a pan and pour the egg mixture and keep the flame low. Spread olives, chicken and lemon on the top when you spread the egg mixture in pan to cook. Cook from both sides and cook in small portions to make sure, omelet remains in the round shape and do not tear. Takeout in a plate, sprinkle grated mozzarella cheese on the top and put it in the oven for 2 minutes on full heat in a preheated oven. Garnish with coriander, mint and green chili. Serve hot and enjoy.

Melt the butter in a non-stick frying pan over a low-medium heat. Meanwhile, add the banana, egg, flour and baking powder to a blender and blitz for 20 seconds.

Tip the buckwheat into a bowl. Pour in 250ml cold water, then cover and leave to soak for at least 4 hrs or preferably overnight.

Drain the soaked buckwheat and pulse a few times with the milk in a food processor to create a semi-smooth texture, then pour into a saucepan along with the poppy seeds. Cook over a low heat for 7-10 mins whisking continuously until creamy and thickened.

Put the blueberries in a small saucepan along with the orange juice, zest and cinnamon. Bring to a simmer over a medium heat and cook gently for 5 mins or until the blueberries pop and become saucy. Spoon the porridge into two bowls and top with the blueberry compote.

Put the flour in a large bowl, then stir in the yeast and a large pinch of salt. Make a well in the centre, pour in 175ml warm water and the oil and bring together with a wooden spoon to make a soft, fairly wet dough. Turn out onto a lightly floured surface and knead for 5-8 mins until smooth. Divide the dough into four balls and arrange on a floured tray, well spaced apart. Cover with a tea towel and set aside for about 40 mins-1 hr until doubled in size.

Heat the oven to 240C/220C fan/gas 8 and put a baking tray in the oven to heat up. Roll the dough balls out on a floured surface into long baguette sticks about 22-25cm long, place on the hot tray and bake for 10-12 mins until puffed up and golden, then leave to cool. Can be made a few hours ahead of baking.

To assemble, split the bread down one side and neatly layer in the tomato, ham, mozzarella and rocket, if using. Mix the pesto with the olive oil, drizzle over, halve and serve.
