Shanghai-style braised pork

Ingredients

Ingredients
1 pork blade bone with rind, about 2kg/4½lb, from a good butcher
1 small orange
2 whole star anise
2 cinnamon sticks
1 tbsp cumin seeds
3 dried red chilli
8 bok choi or Chinese leaves and plain boiled rice, to serve
600ml /1 pint Shaoxing rice wine or dry sherry
1.2 litres/2 pints homemade chicken stock or good quality store bought
300ml /½ pint dark soy sauce
50ml light soy sauce
175g Chinese rock sugar or granulated sugar
8 slices fresh root ginger
6 garlic clove, crushed
6 whole spring onions
1 tbsp salt
1 tsp freshly ground black peppercorn

Direction

Bring a large pan of water to the boil, add the pork. Return to the boil, skim, reduce the heat and simmer gently, partially covered, for 30 minutes. Drain thoroughly.

Using a potato peeler, remove 8 strips of zest from the orange. Put the star anise, cinnamon sticks, cumin seeds, dried chillies and orange zest in a piece of muslin and tie together tightly.

Make the braising liquid by combining all the ingredients in a very large pot and bringing the liquid to a simmer. Add the bag of spices and the blanched pork, and bring back to a simmer, partially covered, skimming all the while.

Cover the pot tightly and continue to simmer gently for 3 hours, until the pork fat and rind are very soft and tender. You can do this up to a day ahead, let the pork cool in the liquid, chill overnight, then reheat gently in the liquid before serving.

Cut the bok choi in halves or quarters depending on their size, or the Chinese leaves into 5cm/2in pieces. When the pork is done, remove it from the liquid. Remove the skin and cut the meat into small pieces. Add the bok choi to the pot and cook over high heat until it is very tender about 3 minutes. Remove the bok choi from the cooking liquid and place on a warm dish. Arrange the pork on top.

Skim off all the fat from the braising liquid and boil it to reduce it by about half. Pour some over the meat to moisten it and serve the rest separately. (You will probably have a lot leftover.) Serve with rice.

Heat the oil in a large paella pan (ours was 45cm). Add the rosemary and sizzle for a minute or 2, then scoop it out to a plate and set aside. Add the chipolatas and brown all over, push to one side of the pan and add the other sausages. Cook for a few mins until the chorizo starts to release some of its oil, then push these aside too. Add the onions and cook until soft, about 8 mins.

Add the passata, BBQ sauce and some seasoning, bring to a simmer and bubble for a few mins, then stir in the beans and bring everything back to a bubble.

Using the back of a spoon, create little spaces in the beans and crack in the eggs, dotting them over the surface. Cover the pan with foil and cook gently for 10 mins or until the eggs are cooked to your liking. Top with the rosemary and serve with buttered toast and mugs of tea.

Chicken breasts with rosemary, pine nuts & verjuice

Put the raisins and verjuice in a bowl and microwave on defrost setting (or warm gently in a pan) for 5 minutes, then cool. Strain, reserving both raisins and verjuice. Strip the rosemary leaves from the stalks and reserve the leaves for another use. Put the stalks into a bowl with 3 tbsp olive oil and a little freshly ground black pepper. Add the chicken breasts and marinate for at least 1 hour. Choose a wide frying pan with enough room for the chicken breasts to cook with lots of space between them. Toss the pine nuts with a little olive oil over medium heat in this pan until golden brown, then cool on a paper towel. Heat the butter in the pan until golden brown, then add 1 tbsp olive oil to stop it burning. Pan-fry the chicken, skin side down, over moderate heat until golden, 6-10 minutes. Turn and cook the other side for 3-4 minutes. (The total cooking time depends on the thickness of the meat, but two-thirds of the cooking time should be on the skin side.) When the chicken is cooked, season, remove from the pan, then rest, skin-side down. Discard any butter from pan and toss in the raisins. Pour in the reserved verjuice and deglaze the pan over the heat until the liquid has reduced by half. Stir in the pine nuts and return the chicken to the pan. Taste the sauce for seasoning before serving.

Chop half the basil leaves and reserve the rest for serving. Mix the chopped basil with the mince, garlic and oregano. Season and roll into 20-24 meatballs. Heat the oil in a frying pan over a fairly high heat and brown the meatballs all over for 5-6 mins. Stir in the passata and bring to the boil. Turn down to a simmer and cook for another 10 mins. Bring a large pan of water to the boil and cook the orzo following pack instructions. Once cooked, drain and spoon onto a serving platter or individual plates. Top with the meatballs, then shave over the Parmesan and scatter with the reserved basil leaves.

Heat clarified butter in a skillet. Then add coconut and sauté it. Then add solidified milk, sugar and green cardamom, cook well. When sugar is properly mixed, add rose water, mix and remove from heat.

Cook the rice following pack instructions. Meanwhile, stir the vinegar, sugar and 100ml of water together until the sugar dissolves. Add the cucumber ribbons and set aside.

Heat the grill to medium. Mix the oil, soy, peanut butter and 100-150ml of boiling water to loosen. Divide the mixture into two, setting aside half for later. Rub the chicken with the other half, then grill for 15 mins or until cooked, turning halfway through. Thickly slice.

Divide the rice between two bowls, top with sliced chicken and some pickled cucumber. Spoon the remaining marinade over the rice and finish with the chilli and chopped peanuts.

Canapés & cocktails

Spicy prawn skewers Marinate 150g cooked prawns in zest and juice 1 lime, 1 tbsp soy sauce, ½ finely chopped chilli, 2 tsp grated fresh root ginger and 1 tsp clear honey for 20 mins-1 hr. To serve, lay each prawn on a baby spinach leaf and thread a cocktail stick through (makes 28).

Stuffed prosciutto balls Mash 100g feta with ½ finely chopped chilli, 2 tsp chopped mint and zest and juice ¼ lemon. Roll into 24 small balls. Quarter 6 prosciutto slices lengthways, then wrap each prosciutto strip around a feta ball (makes 24).

Cucumber salmon Cut 1 large cucumber into 20 thick slices and scoop out some of the seedy middle, leaving a dip. Mix 200ml crème fraîche with zest 1 lemon and freshly ground black pepper, then spoon 1 tsp into each dip. Top with a piece smoked salmon, lemon zest and some black pepper (makes 20).

Festive crackers Take 20 small crackers (we used Morrisons Gouda cheese & mixed seeds cracker bites) or 20 homemade crostini. Spread 1 tsp red pesto onto each cracker, top each with a piece of mozzarella from a 125g ball and garnish with basil leaves (makes 20).

Curried chicken poppadums Arrange a 75g tub mini poppadums on a plate and slice 85g cooked chicken so there’s 1 piece per poppadum. Mix together ½ tsp curry powder, 100ml crème fraîche and zest ½ lemon, put 1 tsp in each poppadum with ½ tsp mango chutney, then finish with a slice of chicken and some chopped coriander. Best assembled just before serving so the poppadums stay crisp (makes 20).

Christmas mojitos Put 140g fresh or frozen cranberries, a handful mint and 2 tbsp brown sugar in a bowl. Crush with the end of a rolling pin, then add a couple of handfuls of crushed ice and stir to mix. Add a shot of vodka to 6-8 tall glasses, divide the cranberry crush between them, then top up with cranberry juice and sparkling water (serves 6-8).

To make the meringues, heat oven to 110C/90C fan/gas 1/4, put the egg whites in a bowl and beat to stiff peaks. Keep the whisk running and add the sugar, 1 tbsp at a time, incorporating completely before adding the next. Whisk until all the sugar has been added and the whites are glossy. Line a large baking sheet with baking parchment. Using a palette knife, spread out the meringue to an even layer, around 5mm thick. Sprinkle over the lime zest and cook for 2-3 hrs or until crisp. To poach the cherries, put the ale, star anise and sugar in a saucepan, bring to the boil to dissolve the sugar, then add the cherries and simmer for 3 mins. Turn the heat off, pop on the lid and leave to cool. Once the cherries are cool, strain through a sieve, catching the liquid in the pan. Keep the cherries in the fridge until needed. Put the pan on the heat and reduce the liquid until syrupy. To make the mousse, put 90g of the chocolate in a large bowl. Set over a pan of simmering water to gently melt. Remove the bowl from the pan and set aside, but keep the pan of water on the heat. Whisk the cream to soft peaks. In a third bowl, whisk the egg yolks with 2 tbsp water. Set the bowl of egg yolks over the pan of simmering water and keep whisking until light, fluffy and thick. Dollop a big spoonful of this into the melted chocolate, whisk to loosen the mixture, then gently fold in the rest. Finally, fold through the whipped cream. Set aside at room temperature. To make the chocolate syrup, whisk all the ingredients together in a pan, bring just to a simmer, then set aside. For the vanilla cream, whisk the cream and vanilla seeds together to soft peaks. Set aside. Break the meringues into shards. To assemble the desserts, dollop a large spoonful of the chocolate mousse into 6 glasses. Top with a spoonful of vanilla cream, some cherries and a drizzle of the chocolate and cherry syrups. Cover with a layer of meringue shards, then repeat the layers. Top the final layer of meringue with some chocolate mousse and poached cherries. Drizzle over the syrups and grate over the remaining chocolate.
