Recipe Description

Elevate your classic banoffee pie with this indulgent twist. The creamy caramel filling is infused with the rich flavor of hazelnuts, and the pie is topped with a sprinkle of flaky sea salt for a perfect balance of sweet and savory.

Ingredients

For the Pastry Crust:**

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1/4 cup ice water

For the Caramel Filling:**

  • 1 can (14 ounces) sweetened condensed milk
  • 1/4 cup unsalted butter
  • 1/4 cup hazelnut spread
  • 1/4 teaspoon flaky sea salt

For the Topping:**

  • 2 ripe bananas, sliced
  • 1 cup heavy cream, whipped
  • 1/4 cup chopped hazelnuts, toasted

Instructions

Make the Pastry Crust:**

  1. In a large bowl, whisk together the flour and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, mixing until the dough comes together.
  4. Divide the dough in half, wrap each half in plastic wrap, and chill for at least 30 minutes.
  5. Roll out one half of the dough on a lightly floured surface to a 12-inch circle.
  6. Line a 9-inch pie plate with the dough, pressing it into the bottom and sides.
  7. Prick the bottom of the pastry with a fork.
  8. Chill the pastry-lined pie plate for 15 minutes.
  9. Preheat oven to 375°F (190°C).
  10. Bake for 15-20 minutes, or until golden brown.
  11. Let cool completely.

Make the Caramel Filling:**

  1. In a medium saucepan, combine the sweetened condensed milk and butter.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and turns golden brown.
  3. Remove from heat and stir in the hazelnut spread and sea salt.
  4. Let cool slightly before spreading over the cooled pastry base.

Assemble the Pie:**

  1. Arrange the banana slices over the caramel filling.
  2. Top with the whipped cream and toasted hazelnuts.
  3. Chill the pie for at least 2 hours before serving.

Tips

  • For a richer flavor, use dark brown sugar instead of white sugar.
  • You can add other nuts to the topping, such as pecans or almonds.
