Ingredients

200g rhubarb, chopped into 3cm slices
1 split vanilla pod
3 tbsp caster sugar
½ small orange, zested and juiced
1 large egg
300ml milk
4 thick slices of white bread
2 tbsp butter
100ml warm custard
Tip
Choosing your bread

Use a thick, hand-sliced loaf for these recipes. If using pre-sliced bread, soak it for half the time stated in the method.

Direction

Simmer the rhubarb with the vanilla pod, caster sugar and the zest and juice of the orange for 8-10 mins, or until the rhubarb is soft but holds its shape. Set aside.

Beat the egg with the milk in a shallow dish, add the bread and leave to soak for 1 min, turning once.

Fry in the butter over a medium heat for 4 mins, then flip and cook for 4 mins more, until golden on both sides. Top with the rhubarb and warm custard.

Brush the cut side of the leeks with 1 tbsp of the oil and season with sea salt and black pepper. Heat a griddle pan over a medium heat and place the leeks, cut-side down, in the pan. Split and seed the chilli and slice into seriously thin matchsticks. Peel the ginger and slice very thinly, then stack the slices and cut them into the same size strips as the chilli. Put all the strips in a bowl, add in the lime juice and stir to mix.

Mini muffin pizzas

Preheat the grill to high and toast the muffin halves until golden. Leave the grill on. Mix the tomato purée and pesto and spread over the cut sides of the muffins. Heat the oil in a frying pan and cook the mushrooms, onion and courgette for 4-5 minutes until softened and golden. Season, then divide the vegetables between the two muffin halves, scatter over the ham or salami and top with the grated cheese. Place under the grill and cook for 4 minutes or until bubbling. Cut each muffin half in half again, and serve on two plates with the lettuce and mustard and cress tossed in vinaigrette.

Simple roast chicken

Heat oven to 220C/200C fan/gas 7. Put the chicken in a large roasting tin, then stuff the garlic and bay leaves into the cavity. Rub the outside of the chicken with butter, then squeeze over the lemon juice and add the lemon halves to the inside of the chicken. Season inside and out, then cook the chicken for 20 mins. Turn the oven down to 190C/170C fan/gas 5 and cook for a further 45 mins or until the chicken juices run clear when you pierce the thigh with a knife. Leave to rest for 15 mins before carving.
