Recipe Description

These elegant cookies combine the flavors of sweet cranberries and nutty pistachios. They’re perfect for a holiday gathering or a special occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped pistachios
  • 1/4 cup dried cranberries

Instructions

  1. Preheat oven to 190°C (375°F).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Gradually add the flour, baking powder, and salt, mixing until a dough forms.
  5. Stir in the pistachios and cranberries.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, or until golden brown.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Tips

  • For a stronger pistachio flavor, use pistachio paste instead of chopped pistachios.
  • You can add other dried fruits, such as cherries or blueberries.
  • Store the cookies in an airtight container at room temperature.

Lamb ouzi

Mix the yoghurt, garlic, onion, rosemary, cardamom and white pepper. Season with salt and rub onto the lamb. Marinate the lamb overnight.

Put the marinated lamb in a baking tray at 180C for 2 hours. Cover with foil 15 minutes before its 2nd hour to make the skin crispy.

Sauté the onion with ghee for 3 mins, then add the mince and cook for 20 mins, constantly stirring to prevent the meat from clumping. When the meat is browned, add salt, sweet pepper, black pepper and cardamom. Then, add chicken stock and cook on high heat for 10 mins. Add rice, stir for 5 mins and cover. Cook, covered, on low heat for 12 mins. When the rice is cooked, mix in the green peas and some of the fried nuts.

Put the rice on a large platter, place the roasted lamb on top and sprinkle with the remaining nuts.

First, make the sauce. Heat the butter in a saucepan, add the leeks and thyme and cook very gently for 10-15 mins until soft but not coloured. Stir in the flour and cook to a sandy paste, then splash in the vinegar and bubble for a moment. Pour in the stock and bring to the boil, then add the cream and simmer until you have a thick sauce. Stir through the mustard, tarragon and chopped turkey, turn off the heat and leave to cool. Set aside. Can be made a day ahead.

To make the pastry, tip the flour into a food processor with the sage and 1 tsp salt. Add the butter and suet, and whizz to fine crumbs. With the motor running, slowly pour in 150ml cold water until the pastry just comes together. Tip onto a lightly floured surface and bring together into a dough. Cut just over a third of the pastry and cover while you roll out the rest to line an oiled 20cm springform tin, leaving an overhang.

Layer some sliced ham or turkey on the bottom, then spoon and spread over a thin layer of sauce and repeat the layers until you get to the top of the tin, finishing with a final layer of meat, then press down gently. Cut away another small ball of pastry from the remaining third. Roll out the larger piece until big enough to cover the pie with an overhang. Brush the edge of the pie with egg yolk, then lift on the pastry lid and press the edges to seal before trimming. Crimp all the way round. Cut a little hole in the middle of the pastry to let steam escape. Brush all over with more yolk and use the last bit of pastry to decorate the top. Can be prepared a day ahead and chilled until ready to cook.

When you’re ready to bake, heat oven to 200C/180C fan/gas 6 with a baking sheet in it. Sit the pie on the hot sheet and bake for 45-50 mins. Leave until warm, remove from the tin and cut into thick wedges or cool and eat cold.

Heat the oil in a large saucepan over a medium heat and fry the ginger and garlic paste for 2 mins. Add the curry paste, sizzle for a few secs, then pour in the coconut milk. Bring to the boil, reduce to a simmer, stir a little and wait for the oil to rise to the surface. Add the chicken and lime leaves, and simmer for 12 mins or until the chicken is cooked through.

Add 1 tbsp of the fish sauce and a pinch of the sugar, then taste – if you like it a little saltier, add more fish sauce; if you like it sweeter, add a little more sugar. Bring to the boil, take off the heat and add the basil.

Spoon the curry into four bowls and top with the chilli, ginger and a few extra basil leaves. Serve with rice.

Nasi goreng (Indonesian stir-fried rice)

Put the rice in a medium heavy-based saucepan and add 520ml water. Quickly bring to the boil, stir once and cover with a tight-fitting lid. Reduce the heat to low and cook for 10 mins. Uncover, fluff up with a fork and spread over a tray. Set aside to cool.

Meanwhile, heat 1 tbsp oil in a large frying pan over a medium heat. Pour in the beaten egg and, as it begins to cook, use a spatula to bring large flakes of cooked egg into the middle of the omelette. Continue to cook like this for a couple of mins, then leave the rest of the egg to set completely. Flip the omelette over and transfer to a plate to cool before cutting it into long, thin shreds.

Drop the beans into a pan of boiling salted water and cook for 3 mins. Drain, refresh under cold water and set aside.

Heat the remaining oil in a wok or large, deep frying pan until almost smoking. Add the chicken and prawns, and stir-fry for 1 min. Tip in the shallots, garlic, chillies and carrots, and stir-fry for a further 2 mins until the carrot is just tender. Add the spice paste and stir-fry for 1 min more. Add the tomato purée, kecap manis, cooked rice and green beans, and stir-fry over a high heat for 2 mins. Add the soy sauce, spring onions and shredded omelette, and toss together.

Spoon the nasi goreng onto warmed plates. Overlap the cucumber and tomato on the side of each plate, sprinkle over the crispy fried onions and serve with prawn crackers.
