Recipe Description

  • 8 slices thick-cut bread
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • Butter, for frying
  • Maple syrup, for serving
  • Powdered sugar, for dusting (optional)

Instructions

  1. In a shallow dish, whisk together the eggs, milk, vanilla extract, and salt.
  2. Cut each slice of bread in half diagonally.
  3. Place a slice of cheese between two bread triangles to form a sandwich.
  4. Dip each sandwich into the egg mixture, making sure it’s fully coated.
  5. Heat a large skillet over medium heat and melt a knob of butter.
  6. Cook the French toast sandwiches for 2-3 minutes per side, or until golden brown and crispy.
