Ingredients

2 tbsp vegetable oil
400g mutton shoulder cut into large chunks
1 tbsp anise seeds
100g ginger
6 garlic cloves
2 shallots
900ml chicken stock
1 large onion, chopped
2 tbsp tomato purée
2 large peppers and 1 scotch bonnet pepper, blitzed in a food processor
2 heaped tbsp peanut butter
1 tsp ground cloves, toasted in a dry frying pan
1 tsp ground grains of selim (or uda, see tip below)
1 heaped tsp dawadawa powder (fermented African locust beans, see tip below)
squeeze of lemon juice

Direction

Heat the oven to 190C/170C fan/gas 5. Heat the oil in a pan over a medium heat until very hot, then fry the mutton pieces until browned (it’s best to do this in batches), then transfer to an ovenproof dish.

Blitz the anise, ginger, garlic and shallots in a food processor until smooth, then pour over the meat along with 800ml of the chicken stock. Cover and cook in the oven for 90 mins.

Meanwhile, fry the onion for 5 mins in the pan that you used to fry the meat, over a low heat, until softened and translucent. Add the tomato purée and cook for another 5 mins, then the peppers, and cook for a further 7 mins.

Mix the peanut butter with the remaining stock, then pour into the onion and pepper mix. Stir in the toasted ground cloves and grains of selim, and cook for 5 mins more.

After the meat has been in the oven for 90 mins, add the peppery peanut butter mix and dawadawa. Return to the oven and cook for another 60 mins or until the meat is very tender. Season and squeeze in a little lemon juice. Serve with rice, couscous or mashed potatoes.

Sesame & spring onion stir-fried udon with crispy tofu

Drain and pat the tofu dry with kitchen paper. Cut into cubes, wrap in more kitchen paper, and place a heavy board over the top. Leave to drain for 15 mins.

Mix the cornflour, chilli flakes and ground peppercorns together in a bowl with a pinch of salt, then add the drained tofu. Toss well to coat.

Heat half the vegetable oil in a large non-stick frying pan over a high heat, and fry the tofu pieces for 5-6 mins until golden all over. Scoop out of the pan, and leave to drain on kitchen paper.

Add the remaining oil to the pan and stir-fry the spring onions and beans for 3-4 mins until tender and lightly golden. Pour a kettle of boiling water over the noodles in a sieve to loosen. Drain well, then tip into the pan. Fry for a few minutes until piping hot. Add the sesame oil and sesame seeds, and sizzle for a few seconds. Splash in the soy sauce, rice vinegar, then add the tofu. Toss well, then serve in bowls with a pinch of sesame seeds on top and more soy sauce on the side.

Tip the leeks and oil into a flameproof casserole dish on a low heat, add the butter and cook everything very gently for 10 mins or until the leeks are soft.

Put the chicken, skin-side down, in a large non-stick frying pan on a medium heat, cook until the skin browns, then turn and brown the other side. You shouldn’t need any oil but if the skin starts to stick, add a little. Add the chicken to the leeks, leaving behind any fat in the pan.

Add the stock to the dish and bring to a simmer, season well, cover and cook for 30 mins on low. Stir in the mustard, crème fraîche and peas and bring to a simmer. You should have quite a bit of sauce.

When you’re ready to serve, put the grill on. Mix the breadcrumbs and parsley, sprinkle them over the chicken and grill until browned.

Sweetcorn pancakes with fried eggs & chorizo salsa

For the pancakes, put the flour, polenta, baking powder, milk and 2 of the eggs in a food processor with a good pinch of salt and whizz together. Add the sweetcorn and coriander and briefly pulse until just combined. Put the oven on a low heat to keep the pancakes warm as you make them. Tip the chorizo and peppers into a non-stick frying pan over a medium-high heat. Fry for 5-10 mins until the peppers have defrosted and softened and the oils have leaked out of the chorizo into the pan. Stir through the salsa, then tip into a bowl and set aside. Wipe out the pan and reheat with half the oil. Pour dollops of the pancake mixture 8-10cm wide into the pan (they will spread a little so leave space between each one). Cook for 3-4 mins until golden on the underside and bubbles appear on top. Flip over and cook for another 3-4 mins until golden brown. Add the rest of the oil and continue cooking until the mixture is used up (you should make 6 in total), keeping the cooked pancakes warm on a plate in the oven. When you’ve cooked all the pancakes, fry the 2 remaining eggs. Serve the pancakes topped with the warm chorizo salsa and the eggs, scattered with coriander leaves, if you like.
