Ingredients

  • Chicken 1 ½ kg (cut into 8 pieces)
  • Lemon juice ½ cup
  • Rose merry 1 tbsp
  • Oregano 1 tbsp
  • Black pepper 2 tbsp (crushed)
  • Brown sugar 2 tbsp
  • Corn flour 2 tbsp
  • Parsley 4 tbsp (chopped)
  • Garlic 4 tbsp (chopped)
  • Oil for brushing
  • Salt to taste
  • For Garnishing:
  • Tomatoes 2 – 3
  • Salad leaves 4 – 5

Method:

In bowl mix together garlic, lemon juice, black pepper, corn flour, rose merry, oregano, parsley, brown sugar and salt. Marinate chicken with the above mixture for 3 – 4 hours. Now bake marinated chicken on 200 degrees for 35 – 40 minutes. Not put baked chicken in a serving dish, garnish with salad leaves, tomatoes and serve.

Heat oven to 220C/200C fan/gas 7. Tip the gnocchi into a roasting tin along with the cocktail sausages and pickled onions. Roast for 25-30 mins or until golden, stirring occasionally.   Carefully spear a couple of gnocchi pieces, a sausage and onion onto each cocktail stick and keep warm while you heat the gravy through in a pan until bubbling. Serve with the gravy on the side for dipping.

Heat oven to 140C/120C fan/gas 1. Put all the ingredients (except the apricots, sultanas and sweets) in a large bowl. Stir everything well, then spread out onto two baking trays in an even layer. Put the tray in the oven for 40 mins.

Leave the granola to cool on the tray, then break it up into small chunks and stir in the sultanas and apricots.

Put the granola in a jar ready for breakfast. To make it suitable for magic reindeer, put a few spoonfuls into a small paper bag and mix in some sweets.

Tie with string or a ribbon and add a fun label for Father Christmas to find.

Cheat’s chicken ramen

Set a large saucepan over a medium heat and pour in the stock. Finely chop the coriander stalks and add to the stock with most of the chilli. Bring to the boil and add 200ml water. Once boiled, reduce the heat and simmer for 5-10 mins to infuse the coriander and chilli. Add the soy sauce and a grinding of black pepper, then the mushrooms, pak choi, chicken and noodles. Simmer for 2 mins until the noodles soften, before adding the bamboo shoots. Serve in deep bowls topped with coriander leaves and the remaining chilli slices.

Baked chicory with chicken in a sage & mustard sauce

Preheat your oven to fan 180C/conventional 200C/gas 6. Trim away the stalk ends of the chicory, discard any limp or tired outer leaves, then cut the vegetable lengthways into quarters. Pour the oil over the bottom of a large shallow baking dish and arrange the sections of chicory, cut-side up, in a single layer. Pour over the wine, stock or water and cover with foil. Bake for 10 minutes while you prepare the rest of the ingredients. Slice the chicken into strips 1cm thick. Season lightly with salt and pepper. Melt the butter in a large frying pan until foaming, add sliced chicken and cook for 4-5 minutes or until the chicken is just turning golden brown. Stir in the shallot and garlic and cook for 1 minute. Remove the dish from the oven and add the chicken mixture to the chicory. Replace the foil and set the dish aside while you make the sauce. Melt the butter for the sauce in the frying pan (no need to wash it) then stir in the flour. Gradually pour in the milk, stirring all the time until the mixture thickens. Remove from the heat and stir in the crème fraîche or soured cream and sage with 2 tsp each of both mustards. Taste and add extra mustard plus salt and pepper if you think they’re needed. Pour the sauce over the chicory and chicken and sprinkle cheese on top. Bake, uncovered, for a further 25-30 minutes until the sauce is bubbling and the top is golden.

Sesame chicken & prawn skewers

Combine the ginger, garlic, honey, soy sauce, sesame oil, lime juice and sesame seeds. Divide between two bowls, then add the chicken pieces to one and the prawns to the other. Toss both mixtures well, then leave to marinate in the fridge for 15 mins.

Cook the chicken in a frying pan over a medium-high heat for 3 mins, then push to one side and add the prawns to the other side of the pan. Cook for 2 mins until the prawns are pink and the chicken is cooked through (use two separate pans if anyone you’re cooking for has an allergy or is a pescatarian). Put the broccoli in a microwaveable bowl with a splash of water, then cover and cook on high for 5 mins.

Thread half of the skewers with chicken and broccoli and the other half with prawns and broccoli.
