Ingredients

  • Cucumbers 2 (peeled and thinly sliced)
  • Onion 1 small (peeled and thinly sliced)
  • Tomatoes 3 small (thinly sliced)
  • Dressing:
  • Low-fat sour cream 1/3 cup
  • Dijon mustard ¼ tsp
  • White vinegar 2 tsp
  • Milk 2 tbsp
  • Sugar 1 tsp
  • Parsley 2 tsp (chopped)
  • Fresh dill (soya) 2 tbsp (chopped)
  • Black pepper ¼ tsp
  • Salt to taste

Cooking Directions

  1. Add the cucumbers, onions and tomatoes in a large bowl. Set aside.
  2. In a small bowl, mix together all dressing ingredients. Pour over salad mixture and toss.
  3. Chill at least 2 hours before serving.
