Einkorn soda bread

Ingredients

250g einkorn flour, plus extra for dusting
250g plain flour
2 tsp bicarbonate of soda
1½ tsp fine sea salt
1 tbsp soft brown sugar
370ml natural yogurt
1 large egg

Direction

Heat the oven to 200C/180C fan/gas 6. Sprinkle a little of the einkorn flour over a baking sheet, then tip both flours, the bicarbonate of soda, salt and sugar into a bowl and stir to combine. Whisk the yogurt and egg together in a jug.

Make a well in the centre of the dry ingredients and pour in the wet mixture. Swiftly mix the ingredients together to create a slightly sticky dough. Form into a round, about 4-5cm thick and put in the middle of the baking sheet. Dip the handle of a wooden spoon into some flour, then lightly press into the top to create a cross. Lightly dust with a little more einkorn flour. 

Bake in the oven for 40-45 mins or until slightly risen with no grey, uncooked patches in the cross. Set aside to cool, then serve with salted butter, if you like.

Peanut butter cheesecake

Oil and line a 20cm round loose- bottomed cake tin with cling film, making it as smooth as possible. Melt the butter in a pan. Crush the biscuits by bashing them in a bag with a rolling pin, then stir them into the butter until very well coated. Press the mixture firmly into the base of the tin and chill. Soak the gelatine in water while you make the filling. Tip the ricotta into a bowl, then beat in the peanut butter and syrup. Ricotta has a slightly grainy texture so blitz until smooth with a stick blender for a smoother texture if you prefer. Take the soaked gelatine from the water and squeeze dry. Put it into a pan with the milk and heat very gently until the gelatine dissolves. Beat into the peanut mixture, then tip onto the biscuit base. Chill until set. To freeze, leave in the tin and as soon as it is solid, cover the surface with cling film, then wrap the tin with cling film and foil. To defrost, thaw in the fridge overnight. To serve, carefully remove from the tin. Whisk the cream with the sugar until it holds its shape, then spread on top of the cheesecake and scatter with the peanut brittle.

Grilled baby onions with cream & basil

Simmer the onions in the stock for 30 mins, adding a little water if needed to keep them covered. Meanwhile, in a small pan, melt the butter, then add the flour and cook for 1-2 mins. Stirring constantly, gradually pour in the milk, then the cream, and bring to the boil. When you have a smooth white sauce, remove from the heat. Allow to cool a little before stirring in the egg yolks, spices and seasoning. Heat grill to high. Drain the onions and lay them in a single layer in an ovenproof dish. Spoon over the cream sauce to cover. Grill for 5 mins until lightly browned, then scatter over the basil before serving.
