Coconut Orange Cupcakes

Ingredients:

1 cup Sugar
2/3 cup Vegetable oil
2 Eggs
1 cup Orange juice
3 cups flour
1 Tbsp Baking powder
1 tsp Baking soda
3/4 tsp Salt
11 ounce can oranges, drained
1 cup Vanilla or white chips

TOPPING:

1 cup Flaked coconut
1/3 cup Sugar
2 Tbsp Butter, melted

Method:

Mix the sugar, oil, eggs and orange juice in a mixing bowl well.
In another bowl, combine dry ingredients; and stir into orange juice mixture until just moistened.
Fold in oranges and chips. Fill muffin cups two-thirds full.
In a bowl, combine topping ingredients; and sprinkle over cupcakes.
Bake at 375 degrees F for 15-20 minutes or until golden brown.
Serve warm or cold.
