Ingredients:

1 3/4 cups cake flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1 cup sugar
2 tablespoons butter
3 tablespoons peanut butter
2 squares unsweetened chocolate, melted
1 cup milk
1 teaspoon vanilla

Method:

Preheat oven to 350°F.
In a bowl, sift flour; measure. Add baking soda, salt, and sugar; sift together 3 times.
In a separate mixing bowl, cream butter and peanut butter until well blended; add melted chocolate and blend well.
Add sifted dry ingredients (i.e. flour, baking soda and salt), milk, and vanilla.
Stir until all flour is moist; beat for 1 minute. Grease two 8-inch layer cake pans; line bottom with waxed paper.
Turn batter into prepared cake pans.
Bake at 350° in preheated 350°F for 25 minutes or until a wooden pick or cake tester inserted in center comes out clean.
Ice with icing.

One-pot chicken with braised vegetables

Heat oven to 220C/fan 200C/gas 7. Season the chicken inside and out with salt and pepper. Heat the butter in a casserole dish until sizzling, then take 10 mins to brown the chicken on all sides. Remove the chicken from the dish, then fry the bacon until crisp. Add the potatoes and shallots, then cook until just starting to brown. Nestle the chicken among the veg, pour over the wine, then pot-roast, undisturbed, for 1 hr or until the chicken is cooked. After 1 hr, remove the chicken and place the pan back on the heat. Stir the peas into the buttery juices, adding a splash of water if the pan is dry, then simmer until the peas are cooked through. Finally, add any juices from the rested chicken, then stir through the herbs and serve with the chicken.

Heat the oil in a large pan. Add the duck legs and brown on all sides for about 10 mins. Remove to a plate and set aside. Add the onions to the pan and cook for 5 mins until softened. Add the garlic and cook for a further 1 min, then stir in the cinnamon and flour and cook for a further min. Return the duck to the pan, add the wine, tomatoes, stock, herbs, sugar and seasoning. Bring to a simmer, then lower the heat, cover with a lid and cook for 2 hrs, stirring every now and then. Carefully lift the duck legs out of the sauce and place on a plate – they will be very tender so try not to lose any of the meat. Pull off and discard the fat, then shred the meat with 2 forks and discard the bones. Add the meat back to the sauce with the milk and simmer, uncovered, for a further 10-15 mins while you cook the pasta. Cook the pasta following pack instructions, then drain, reserving a cup of the pasta water, and add the pasta to the ragu. Stir to coat all the pasta in the sauce and cook for 1 min more, adding a splash of cooking liquid if it looks dry. Serve with grated Parmesan, if you like.
