Ingredients:

150 gm plain (semi-sweet) chocolate
20 ml instant coffee powder
30 ml hot water
4 egg whites
100 gm caster sugar
Chocolate shavings, to decorate

Method:

Melt the chocolate in a bowl over a pan of hot water (or melt in the microwave).
Dissolve the coffee in the water and stir into the chocolate.
In a separate bowl, whisk the egg whites until stiff.
Whisk in half the sugar until stiff and glossy. Gradually, fold in the remainder.
Fold into the chocolate mixture.
Spoon into six coffee cups and chill until set.
Serve cold sprinkled with chocolate shavings.

Cabbage roll enchiladas

Heat the oil in a deep non-stick frying pan and stir-fry the peppers briefly until softened. Add the beef and continue to fry, breaking it up with a wooden spoon until it turns brown, then stir in the spices and cook for 1 min more. Tip in the tomatoes, tomato purée, bouillon, powder, garlic, chilli and beans (along with the liquid from the cans), and simmer, uncovered, for 15 mins, stirring until the beef is cooked and the mixture is thick.

Meanwhile, bring a large pan of water to the boil. Add the cabbage leaves and cook, submerged, for 2 mins until softened. Rinse under cold running water to cool. Drain.

Heat the oven to 200C/180C fan/ gas 6. Working with one cabbage leaf at a time, spoon some of the meat mixture into the centre. Roll up so the filling is enclosed. Lay seam-side down in a large shallow baking dish. Repeat with the rest of the leaves and filling, packing the rolls against one another in the dish.

Mix the yogurt and cheese. Spread over the rolls. Bake for 20-25 mins until bubbling. Sprinkle over the coriander, extra chilli and paprika. Serve with lime wedges on the side.

Warming chocolate & banana porridge

Put the oats, cocoa and vanilla in a large bowl and pour over 1 litre cold water. Cover the bowl and leave to soak overnight.

The next morning, tip the contents into a saucepan with the chopped banana. Cook over a medium heat for 5 mins, stirring frequently, until the oats are cooked.

Put half of the mixture in the fridge for the next day. Spoon the rest into two bowls, swirl in 1 pot yogurt and slice over a banana (save the other pot and banana for the next morning). Warm through with a splash of milk to reheat.

Mixed greens with walnuts

Bring a large pan of salted water to the boil, add your sliced sprouts and cabbage, then boil for 2 mins. Drain, rinse in cold water to cool, then drain well again. Soften the sliced shallots in a frying pan with the butter and oil until meltingly soft. Cover the veg separately with cling film and chill for up to 24 hrs, until just before serving. While your turkey is resting, tip shallots back into your largest frying pan with the stock and heat until simmering. Stir in the blanched sprouts, cabbage and frozen peas and cook for 2-3 mins until all the veg is tender and stock reduced. Season and stir in the walnuts just before serving
