Ingredients

  • All-purpose flour 2 1/4 cups
  • Granulated sugar 1/2 cup
  • Baking powder 1 tsp
  • Salt 3/4 tsp
  • Semi-sweet chocolate morsels 1 cup (6 oz.)
  • Butter 3/4 cup (1 1/2 sticks)
  • Milk 1 1/2 cups
  • Eggs, lightly beaten 3
  • Vanilla extract 1 tsp
  • Toppings (whipped cream, chocolate shavings, fresh fruit) 1

Cooking Directions

  1. Combine flour, sugar, baking powder and salt in large bowl.
  2. Microwave morsels and butter in medium, microwave-safe bowl on High (100%) power for 1 minute, stir.
  3. Morsels may retain some of their original shape.
  4. If necessary, microwave at additional 10- to 15-second intervals, stirring until melted.
  5. Cool to room temperature.
  6. Stir in milk, eggs and vanilla extract.
  7. Add chocolate mixture to flour mixture, stir (batter will be thick).
  8. Cook in Belgian waffle maker according to manufacturer’s directions.
  9. Serve warm with your choice of toppings.

Heat the slow cooker if necessary. Heat the oil in a large frying pan. Tip the onions and thyme sprigs and fry for 2-3 mins. Then add the carrots and fry together, stirring occasionally until the vegetables start to brown. Stir in the mince and fry for 1-2 mins until no longer pink. Stir in the flour then cook for another 1-2 mins. Stir in the tomato purée and lentils and season with pepper and the Worcestershire sauce, adding a splash of water if you think the mixture is too dry. Scrape everything into the slow cooker. Meanwhile cook both lots of potatoes in simmering water for 12-13 minutes or until they are cooked through. Drain well and then mash with the crème fraîche. Spoon this on top of the mince mixture and cook on Low for 5 hours – the mixture should be bubbling at the sides when it is ready. Crisp up the potato topping under the grill if you like.
