Hiya! Today we will discuss about Chicken Laap

Ingredients:

Chicken mince 250 gm
Rice 2-3 tbsp
Whole red chilies 4-5
Garlic paste 1 tbsp
Fish sauce 2-3 tbsp
Chopped green onion 1 cup
Chopped coriander leaves 1 cup
Chopped mint 1 cup
Lemon juice 3-4 tbsp
Chopped cauliflower 1/2 cup
Cucumber 1
Oil 2-3 tbsp
Chinese salt 1 tsp

Method:

Fry red chilies on tawa, crush it and keep it aside.
Now put oil in pan, add garlic and chicken mince and roast it.
Then put 1/2 cup water and leave for 10-15 minutes.
When water dries and mince is ready, take it out and cool it.
Now put mince in bowl, add red chilies, fish sauce, coriander leaves, mint, green onion, Chinese salt and lemon juice and mix it nicely.
Now put roasted rice and mix it.
Then take out in salad platter, garnish with cucumber and cabbage and serve.

Heat the oil in a large non-stick frying pan. Add the chilli and garlic and cook until softened and starting to colour. Break in the eggs on either side of the pan. Once they start to set, spoon the beans (with their juice) and the tomatoes around the pan and sprinkle over the cumin seeds. You’re aiming to warm the beans and tomatoes rather than cook them.   Remove the pan from the heat and scatter over the avocado and coriander. Squeeze over half of the lime wedges. Serve with the remaining wedges on the side for squeezing over.

Pork & chickpea curry

Heat a small pan over a medium heat. Add the peppercorns, fennel, coriander and cumin seeds, and dry-fry for about 1 min, stirring constantly, until fragrant. Tip into a small food processor with the chilli powder and turmeric. Put the garlic in the pan and fry for 1-2 mins until flecked golden. Add the garlic and vinegar to the spices and process to a coarse paste.

Put the pork in a bowl. Add the paste and mix with your hands to combine – it’s best to use disposable gloves, as turmeric stains. Leave to marinate for 15 mins.

Heat oven to 150C/130C fan/gas 2. Heat oil in a flameproof dish and fry the onions until beginning to colour. Increase heat to high, add the pork and fry, stirring often, for about 10 mins until darkened. Add the peppers, tomatoes and sugar, and cook for 10 mins more until the tomatoes have reduced and the paste clings to the meat. Stir in the chickpeas and stock. Put on the lid, bring to a simmer, then put in the oven for about 1½ hrs until the meat is tender and the sauce thickened. Eat immediately with rice, or cool before freezing in batches for up to 3 months.

Spiced parsnip & ham soup

Heat the oil in a saucepan and fry the curry powder for 1 min until fragrant. Stir in the veg, cover with three-quarters of the stock and simmer for 5-10 mins. Blend the soup until very smooth with a hand blender or food processor, adding more stock if the soup is too thick. Stir in the cream and ham, then return to the pan and gently reheat. Season and serve with a drizzle of cream on top.

Put 1 tbsp rapeseed oil in a frying pan over a medium heat. Add the onion and fry for 10 mins or until soft and translucent. Add the garlic and cook for 1 min. Leave to cool. 

Mix the cooled onions, pork mince, egg yolk, a good grating of nutmeg and the breadcrumbs in a bowl with your hands until well combined. Form into 12 balls and chill for 15 mins. 

Heat the remaining oil in a frying pan and fry the meatballs for 5 mins over a medium heat, turning often until golden. Pour over the stock and bubble for 8-10 mins or until it has reduced a little. Stir through the mustard and yogurt.

Steam the greens for 5 mins or until tender. Serve the meatballs with the greens and a dollop of the sauce.
