Recipe Description

Chicken Bukhara is a rich and aromatic chicken dish that comes from the fusion of Persian and Central Asian flavors. The chicken is marinated in a blend of spices and slow-cooked to perfection, resulting in a tender, flavorful dish. This dish is perfect for a special dinner or gathering and pairs beautifully with naan or steamed rice.

Ingredients

  • 1 kg chicken (cut into pieces)
  • 2 tablespoons ghee or vegetable oil
  • 2 large onions, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 tomatoes, chopped
  • 1/2 cup yogurt
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

Step 1: Prepare the Chicken

  • Wash and clean the chicken pieces. Pat them dry with a kitchen towel.
  • In a large bowl, mix the chicken with yogurt, turmeric, red chili powder, salt, garam masala, cumin powder, and coriander powder.
  • Let the chicken marinate for at least 30 minutes (preferably 1-2 hours for better flavor).

Step 2: Cook the Onions

  • Heat the ghee or vegetable oil in a large pan over medium heat.
  • Add the chopped onions and sauté them until they turn golden brown, about 8-10 minutes.

Step 3: Cook the Chicken

  • Add the ginger-garlic paste to the onions and cook for 2 minutes until fragrant.
  • Stir in the chopped tomatoes and cook until the tomatoes soften and release their juices, about 5 minutes.
  • Add the marinated chicken and cook for 10-15 minutes, stirring occasionally, until the chicken is browned on all sides.

Step 4: Simmer and Cook Through

  • Add a little water (about 1/4 cup) to create a rich gravy and cover the pan.
  • Reduce the heat to low and let the chicken simmer for another 20-25 minutes until the chicken is cooked through and tender.

Step 5: Garnish and Serve

  • Once the chicken is cooked and the sauce has thickened, remove from heat.
  • Garnish with freshly chopped coriander leaves.
  • Serve hot with naan or steamed rice.

Put the flour in a large bowl, then stir in the yeast and a large pinch of salt. Make a well in the centre, pour in 175ml warm water and the oil and bring together with a wooden spoon to make a soft, fairly wet dough. Cover with a tea towel and set aside for about 40 mins-1 hr until doubled in size.
