Ingredients:

Puff pastry 1/2 kg
Chicken 300 gm
Red chili 1/2 tsp
Black pepper 1/2 tsp
Salt 1/4 tsp
Vinegar 1 tbsp
Garlic paste 1 tbsp
Carom seeds 1/2 tsp
Green chilies 2
Onion 1
Corn flour 1 tsp
Egg 1
Oil 1 tbsp

Method:

Marinate chicken with red chili, black pepper, salt, vinegar, garlic paste and carom seeds for 30 minutes.
Now cook chicken on grill pan for 15 minutes.
When it cooks, shred it.
Now heat oil in pan and fry onion until brown.
Then put chicken, green chilies, onion and corn flour.
Then roll puff pastry and cut with pastry cutter.
Now keep chicken filling and close it.
Then brush with egg and bake on 200 degrees C for 20 minutes.
It is ready.

Teriyaki noodle broth

Pour the stock into a large pan and heat until just simmering. Stir in the ginger and teriyaki marinade or soy sauce and then add the five-spice powder for a real flavour hit. Add your chosen noodles and cook for 3-4 minutes, giving them a gentle stir to loosen them up every now and then. Tip in the stir-fry vegetables and mushrooms, cook for a couple of minutes, and then add the cooked chicken and simmer for a further 1-2 minutes. Season the soup to taste and serve it as soon as possible. Ladle into 4 warmed bowls and sprinkle with the sesame seeds. Put the chilli sauce bottle on the table, so that everyone can fire up their soup with more heat if they want to.

Fresh raspberry jelly

Use the oil to lightly grease the inside of a 600ml jelly mould. Put the gelatine leaves in a small bowl of cold water, one at a time so they don’t stick together. Leave to soak while you cook the raspberries. Pour 300ml water into a large saucepan. Add the caster sugar, heat gently over a medium heat, stirring occasionally until the sugar has dissolved, then add the raspberries. Bring to the boil, then turn the heat right down so the mixture is barely simmering, and cook for 5 mins until the raspberries break down. Stir well, but don’t mash them too much as the raspberries will break down in the heat. Carefully pour the raspberry mixture through a sieve set over a large heatproof measuring jug. Stir in the lemon juice, then either top up with cold water or pour some away to ensure you have exactly 600ml total liquid. Drain the water from the gelatine leaves and squeeze out any excess before adding to the raspberry mix. Stir well until the gelatine has completely dissolved, then pour into your jelly mould (see tip below). Once cold, place in the fridge and leave overnight to set. Turn the jelly out onto a large plate just before serving. Serve with a scoop of clotted cream or ice cream, and some raspberries.

Ingredients: Mutton chops 1/2 kg Ginger garlic paste 1 tbsp

Leek, fennel & potato soup with cashel blue cheese

Quarter the fennel and discard the tough outer leaves and the hard core from each piece. Slice the rest of the flesh, including any little fronds. 

Heat the butter in a saucepan and add the fennel, leeks and potato. Cook over a medium heat for about 5 mins, turning the vegetables over in the butter. The vegetables shouldn’t colour. Add a splash of water, cover the pan and cook the vegetables for 20 mins, stirring every so often. Add the stock or water and garlic, season, bring to the boil, then turn the heat down low and cover the pan with a lid or foil.

Cook for about 10-15 mins, until everything is completely tender. Stir in the cream and leave to cool. Purée in a blender until completely smooth. Check the seasoning and return the mixture to the saucepan – you can reheat it quickly just before serving. Ladle into bowls and scatter each one with the walnuts and cheese.
