Ingredients

  • Baking mix 4 cups
  • Cheddar cheese 4 oz (grated)
  • Water 1 cup
  • Butter 1 cup (melted)
  • Garlic powder 1 tsp
  • Salt ¼ tsp
  • Onion powder 1/8 tsp
  • Parsley 1/8 tsp (dried)

Cooking Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl mix baking mix, cheese, and water.
  4. Mix by hand until combined.
  5. Drop dough in approximately 1/4 cup mounds onto baking pan.
  6. Bake for 10-12 minutes or until the tops of the biscuits begin to turn light brown.
  7. Now mix melted butter, garlic powder, salt, onion powder and parsley.
  8. Brush over the tops of the baked biscuits, as you take out biscuits out the oven.

Pepper, pesto & sweetcorn calzones

Make up the bread mix to pack instructions, reserving a little of the flour for dusting, and leave to prove for 30 mins.

Line a baking tray with baking parchment. Tip the dough onto a floured surface and cut into quarters. Roll each ball of dough to a circle, roughly 20cm wide. Spread a little passata over each base, leaving a border of about 1cm around the edge. Season well.

Top with the peppers, sweetcorn, mozzarella, Parmesan, basil and blobs of pesto. Fold each base in half, to make a half-moon shape, then squeeze the edges together, rolling them a little to stick and create a seal. Cover the tray with cling film and leave for 10 mins. Heat oven to 220C/200C fan/gas 7.

Brush the calzones all over with beaten egg, then bake for 25-30 mins or until puffed and golden brown. Serve with dressed salad leaves.

Roast chicken with lemon & rosemary roots

Heat oven to 200C/180C fan/ gas 6. Tip the carrots, celeriac, swede, onions and garlic into a large roasting tin with the oil, rosemary leaves and a grinding of black pepper. Toss well and roast for 5-10 mins while you get the chicken ready.

Grate the zest and squeeze the juice from the lemon, set aside and put the lemon shells and the woody stalks from the rosemary inside the chicken. Stir the veg, scatter over the lemon zest and drizzle over the juice, then sit the chicken on top of the veg and roast for 1-1 1/4 hrs until the chicken is tender but still moist. Take the chicken from the oven and leave to rest for 10 mins. Keep the veg in the oven and steam one of the bags of kale (if you’re eating this over two days for the Healthy Diet Plan, otherwise steam both).

Squeeze the garlic from the skins. For the Healthy Diet Plan, serve half the garlic and root veg with the chicken legs and kale. Eat one breast with the remaining veg and bag of kale another night, and save the remaining breast for the Mexican bean soup. Alternatively, serve it all together as a meal for 4.

Spicy turkey & pepper bake

Heat oven to 200C/180C fan/gas 6. Cook the potatoes in a large pan of salted water for 12-15 mins or until tender. Drain well, then return to the pan and allow to steam for 3 mins. Add some seasoning and the butter, then roughly mash with a fork and set aside until later. Meanwhile, cook the peppers and onion in a large pan for 5 mins – the water in the peppers should stop them sticking. Stir in the turkey mince, chilli and paprika and cook until browned. Pour in the stock, then bubble for 10 mins until thickened. Transfer the turkey mince into an ovenproof dish, top with the mash and cook for 30 mins or until golden and bubbling.
