Ingredients

  • For Chargha:
  • Chicken 1 kg (whole)
  • Curd ½ cup
  • Prepared tandoori masala 3 tbsp
  • Salt 1 tsp
  • Lemon juice 2 tbsp
  • Vinegar 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Oil ¼ cup
  • For Tandoori Masala:
  • Salt 1 tbsp
  • All spice powder 1 tbsp
  • Chili powder 3 tbsp
  • Orange red color ½ tsp
  • Coriander seeds 3/tbsp (roasted and ground)
  • Fennels seeds 2 tbsp (roasted and ground)
  • White cumin whole 3 tbsp (roasted and ground)

For Tandoori Masala:

Mix all together and grind finely.Fill bottle and use accordingly.

For Chargha: Give cuts on whole chicken very well. In a bowl add curd, prepared tandoori masala, salt, lemon juice, vinegar, ginger garlic paste and oil. Mix all well and marinate chicken for 2 hours. Put in a pan and cook on low flame till chicken is done

Spaghetti with walnuts, raisins & parsley

Cook the pasta in boiling water, following pack instructions. Meanwhile, heat the oil in a frying pan and cook the onions until soft and golden brown – about 8-10 mins. Add the raisins and stock and cook for 2-3 mins until hot through. Toss with the pasta, Parmesan, walnuts and parsley.

Heat the oil in a large non-stick frying pan. Tip in the prosciutto and fry for about 2 mins until crisp. Remove with a slotted spoon, letting any fat drain back into the pan, and set aside. Put the onion, garlic and herbs in the pan and fry for 3-4 mins. Spread the onion out in the pan, then lay the chicken breasts on top. Season with pepper and fry for 5 mins over a medium heat, turning the chicken once, until starting to brown on both sides and the onion is caramelising on the bottom of the pan. Remove the chicken and set aside on a plate. Raise the heat, give it a quick stir and, when sizzling, pour in the wine and let it bubble for 2 mins to reduce slightly. Lower the heat to medium, return the prosciutto to the pan, then stir in the tomatoes (breaking them up with your spoon), tomato purée and mushrooms. Spoon 4 tbsp of water into the empty tomato can, swirl it around, then pour it into the pan. Cover and simmer for 15-20 mins or until the sauce has thickened and reduced slightly, then return the chicken to the pan and cook, uncovered, for about 15 mins or until the chicken is cooked through. Season and scatter over the parsley to serve.

Herby sausage, apple & sourdough stuffing

Heat the oven to 180C/160C fan/gas 4. Tear the bread into chunks, tip into a roasting tin and toss in the oil. Roast for 10-15 mins until crisp. Pour over the stock, then leave to cool.

Heat the butter and a drop of oil in a pan. Cook the leeks and onions over a low-medium heat for 15 mins until soft and starting to caramelise. Stir in the fennel seeds. Leave to cool.

Heat the oven to 200C/180C fan/gas 6. Squeeze the sausage meat from the skins into a bowl. Add the apples, herbs, egg, leek and onion mix, and a grinding of black pepper. Combine everything well with your hands. Mix in the bread and press into a roasting tin. Drizzle the sage leaves with oil and press onto the stuffing. Bake for 30 mins until golden.

Heat a dry frying pan and add the coriander and cumin seeds. Toast until they begin to colour and release their aromas. Remove from the heat, then grind to a powder using a pestle and mortar. Wrap the shrimp paste in foil and in the same dry pan, ‘toast’ the foil package for 2 mins on each side.

Pound the garlic using a pestle and mortar, then add the shallots, coriander, chillies, galangal, turmeric and lemongrass. Finally, add the shrimp paste and ground spices and pound to a smoothish paste. Alternatively, whizz everything in a small blender or mini chopper in the same order or, for the best and easiest results, half pound in a pestle and mortar, then finish in the chopper. The recipe makes double so save half, but you can also make a much bigger batch if you want.

To make the curry, open the cans of coconut milk, carefully remove the thick cream and spoon it into a warm wok or large frying pan. Cook it slowly, stirring all the time, until it reduces to a thick paste and the oil starts to separate. Add the sugar, let it dissolve then cook until caramelised and smoking. Stir in the green curry paste and cook for 1-2 mins. Add the chicken and stir well to coat in the paste.

Pour in the rest of the coconut milk, scatter in the lime leaves and splash in half the fish sauce. Let the sauce bubble for about 10 mins until the oil in the coconut milk starts to come through to the surface and the chicken is cooked. Add the green beans and squeeze in the juice of 1 lime. Taste the sauce – you are after a hit of salt (from the fish sauce) sweet, (from the sugar) and sour (lime juice) – and adjust accordingly. Simmer everything for 5 mins more until the beans are just cooked. Scatter over the Thai basil and red chilli, then bring to the table in the cooking dish and serve with jasmine rice.
