Blackberry apple oat bake

500ml semi-skimmed milk
2 small cinnamon sticks
6 cardamom pods, bashed
2 Gala apples, peeled, cored and cut into 1cm cubes
200g jumbo porridge oats
1 egg, beaten
1 tsp vanilla extract
1 tsp baking powder
100g pecans, roughly chopped
320g blackberries
milk or fat-free yogurt and maple syrup, to serve

Direction

Heat the oven to 200C/180C fan/gas 6. Put the milk, spices and apple in a small saucepan. Cover, gently bring to the boil and simmer for 10-12 mins. Set aside to infuse for at least 15 mins.

Remove and discard the spices, then pour the apples and milk into a large bowl and roughly crush the apples with the back of a fork. Mix in the oats, egg, vanilla, baking powder, pecans and blackberries.

Tip into a 2-litre ovenproof dish and bake for about 30-35 mins until piping hot in the middle. Serve with milk or yogurt and maple syrup, if you like.

Heat the butter in a large pan. Add the ham, frozen peas, 850ml hot water (straight from the kettle), chicken stock cube and the handful of mint leaves. Season well. Heat the oil in a frying pan. Add the shallot and a generous pinch of salt and cook for 2-3 mins until softened, then add the garlic, breadcrumbs, pecans and thyme and cook for 1 min more. Add a splash of vegetable stock to bring the mixture together, then set aside.

Heat oven to 180C/160C fan/gas 4. Cut the dates in half lengthways (but don’t cut all the way through). Take small balls of the stuffing and push inside the dates, then push the sides of the dates back together. Put a sage leaf on top of each date, then put the dates on a baking tray lined with baking parchment. Get ahead by prepping your dates up to this point – they will keep in the fridge overnight ready to be baked.

Brush the outside of the dates liberally with olive oil, then bake for 15-20 mins until the sage leaf is crisp. Serve immediately.
