Ingredients:

1 1/4 cups whipping cream,
16 1/2 ounces pitted cherries, in heavy syrup
1 1/2 tablespoons cherry syrup
3 ounces semisweet chocolate chips
Grated semisweet chocolate, for garnish (optional)
Mint sprigs, for garnish (optional)

Method:

In a bowl, whip cream to form firm peaks. Reserve ½ cup in small bowl; cover and refrigerate.
Set aside larger amount of cream. Thoroughly drain cherries in strainer, reserving ¼ cup of syrup in small saucepan; add cherry syrup.
Place chocolate chips in container of blender. Bring syrup mixture to boil; reduce slightly to about 1/4 cup.
Immediately pour over chocolate chips, and blend until completely smooth, scraping sides of container as needed.
With rubber spatula, scrape chocolate mixture into larger portion of reserved whipped cream and fold in until streaks disappear.
Fold in cherries, reserving 4 cherries for garnish. Cover and refrigerate 2 to 6 hours.
Spoon into 4 stemmed dessert glasses.
Dollop with smaller portion of whipped cream, and garnish with remaining

Kale & chorizo broth

Heat 2 tbsp of the oil in a large saucepan. Add the onions, garlic and chorizo, then cook for 5 mins until soft. Throw in the potatoes and cook for a few mins more. Pour in the stock, season and bring to the boil. Cook everything for 10 mins until the potatoes are on the brink of collapse. Use a masher to squash the potatoes into the soup, then bring back to the boil. Add the kale and cook for 5 mins until tender. Ladle the soup into bowls, then serve drizzled with the remaining olive oil.

One-pan roast chicken & potatoes

Heat oven to 190C/170C fan/gas 5. Stuff the chicken cavity with 2 lemon halves, 2 rosemary sprigs, 4 onion quarters and some seasoning. Put the chicken into a large roasting tray. Crush 3 garlic cloves, then add to a small bowl with the thyme leaves and olive oil, mix, then rub this all over the chicken with some seasoning. Arrange the potatoes around the chicken with the rest of the lemons and onions, rosemary and whole garlic cloves, and lemon thyme. Cook in the oven for 1 hr 20 mins, turning the potatoes in the pan once or twice. To check if the chicken is cooked, pierce the thigh with a skewer and the juices should run clear. Remove the chicken from the tray and place on a serving dish or board to rest for 15-20 mins. As you lift the chicken, let any juices pour back into the tray. Increase oven temperature to 200C/ 180C fan/gas 6 and cook the potatoes for a further 10-15 mins or until tender. If you want gravy, use a slotted spoon to remove the potatoes from the tray to a serving bowl, then use a potato masher to mash all the juices, lemons, herbs and garlic together in the roasting tray, adding a splash of water if it’s too pulpy. Push this mix through a sieve, taste the gravy and add some more seasoning if you need to. Bring everything into the garden so everyone can help themselves.

Chicken meatballs

Heat the oven to 200C/180C fan/gas 6. Put the chicken in a food processor and pulse until finely chopped. Scrape into a bowl and add the breadcrumbs, egg, onion, parmesan, half the crushed garlic, and half the oregano. Season really well, and mix with clean hands until everything is evenly distributed. Shape into 20 meatballs, and put onto an oiled baking tray. Brush the meatballs with 1½ tbsp oil. Bake for 20 minutes until cooked through and golden brown.

Meanwhile, heat the remaining ½ tbsp oil in a deep frying pan. Fry the remaining garlic for 30 secs, then add the chopped tomatoes and reserved oregano. Season with salt, pepper, and a pinch of sugar. Simmer for 10-15 mins stirring frequently, until the tomatoes break down and you get a thick sauce.

Bring a large pot of salted water to a boil. Add the spaghetti and cook for 10 mins until al dente.

Add the cooked meatballs to the tomato sauce and gently stir through. Heat for a few minutes while you drain the spaghetti and spoon into warmed pasta bowls. Serve the meatballs and sauce on top. Drizzle over a little olive oil and a grating of more parmesan, if you wish.
