Ingredients

  • 200g dark chocolate, chopped
  • 150g unsalted butter
  • 200g granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 100g all-purpose flour
  • 25g cocoa powder
  • 150g fresh raspberries
  • Pinch of salt

Instructions

  1. Preheat oven to 180°C (350°F). Line a 9×9 inch baking pan with parchment paper.
  2. In a heatproof bowl, melt the chocolate and butter together over simmering water. Stir until smooth, then remove from heat.
  3. Whisk in the sugar, followed by the eggs, one at a time. Add the vanilla extract and mix well.
  4. In a separate bowl, sift together flour, cocoa powder, and salt. Gently fold this into the chocolate mixture.
  5. Pour half the batter into the prepared pan, sprinkle half the raspberries over the batter, then pour the remaining batter on top.
  6. Arrange the remaining raspberries on top and lightly press them into the batter.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
  8. Cool completely in the pan before slicing into squares. Enjoy!
