Ingredients:

For Filling:
Beef boneless 500 gm
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Papaya 2 tbsp
Salt 1 tsp
Lemon juice 2 tbsp
All spice powder 1 tsp
Cumin powder 1 tsp
Red chili powder 2 tbsp
Yogurt 2-3 tbsp
Vinegar 2 tbsp
Oil as required
Onions rings as required
Chili garlic sauce as required
Parathay as required
For Paratha Dough:
All-purpose flour 500 gm
Salt to taste
Oil 1/2 cup
Water as required to knead

Direction:

For paratha dough: Mix all-purpose flour, salt and oil nicely and knead soft dough with water nicely.
Then put in big glass bowl, cover with wet cloth and keep in warm place for 30 minutes.
For filling: Cut boneless beef into small pieces.
Put ginger paste, garlic paste, papaya paste, salt, lemon juice, all spice powder, cumin powder red chili powder, yogurt and vinegar in bowl and mix it nicely.
Then add beef and marinate it for 60 minutes.
Now put marinated beef with marination in pot and roast it.
Then add water as required and cook until beef tender and water dries.
When beef tenders and masala is cooked, remove from stove.
For assemble: Now take dough, make small balls and roll all balls like roti.
Then heat oil in big wok and fry parathay until golden brown from both sides.
Now spread chili garlic sauce on parathay and keep beef and onion slices.
Then fold it and serve with mint yogurt chutney..

Bring a large pan of water to the boil. Cook the orzo following pack instructions, drain and set aside. Meanwhile, heat the oil in a frying pan and fry the bacon for 4-5 mins until crispy. Stir in the tomatoes and cook for a couple mins more. Stir in the orzo, pesto and avocado, and heat for 2 mins more. Spoon onto a serving plate, then scatter with rocket leaves and Grana Padano.

Heat the cream in a heavy-bottomed pan until it is warm but not boiling (you don’t want to overheat the chocolate, so be careful not to overdo it). Take the pan off the heat, then add the chocolate to the pan with the cream and leave to melt for a while, then beat with a wooden spoon. At first it looks like it won’t go smooth, but it will. Leave to cool and set. You can also chill it, but take it out of the fridge before serving so that it isn’t too firm or ‘fridge cold’. Cut the bread into fine slices and toast on each side (the best way is under the grill, but watch it like a hawk). Serve the ganache in glasses in small scoops. Drizzle generously with olive oil and sprinkle with sea salt. Brush the toast with more olive oil and serve with the ganache.

Chicken with wine & mushrooms

Toss the chicken in the flour, then tap off the excess. Mix 1 tsp of the excess flour with a little stock and set aside. Heat the oil in a frying pan, then add the chicken, mushrooms and thyme. Cook over a medium-high heat for about 5 mins, turning the chicken breasts over once until golden. Lift the chicken out, then set aside. Pour in the wine and the remaining stock and boil for 5 mins or until reduced by half. Add the flour and stock mix, stirring until the sauce thickens a little. Put the chicken back into the pan, along with any juices from the plate, then simmer for 5 mins or until cooked through and the sauce is glossy. Serve with mash.

The day before, cut all the meat into small chunks – this will take at least 30 mins. In a spacious, heavy-based pan, fry the pancetta in the oil over a medium heat until it is crisp and the fat has melted.

Stir the onions and garlic into the crisping pancetta and cook, stirring often, for 10-15 mins until soft.

Cut the lemon into quarters lengthways, then remove the pithy core and seeds. Chop into small pieces (each with a bit of peel). Remove the pan from the heat and scoop the contents into a sieve, letting any fat drain back into the pan – and give some encouragement with a wooden spoon.

Return the pan to the heat and brown the pork in the hot fat, then stir in the beef and brown that too. Add the chilli powder and cumin, and cook over a low heat for 2 mins, stirring constantly. Add the flour and cook for a further 2 mins. Add the bay leaves, 1/2 tsp salt, the lemon, oregano, tomato purée, red wine and stock. Return the onions to the pan. Bring to a simmer, stirring often, then reduce the heat and cook, uncovered, and stirring occasionally to avoid sticking, for 2 hrs until the sauce is thick and the liquid has reduced. Add salt to taste. Cool, cover and chill overnight. Can be frozen at this stage for up to 1 month – defrost overnight in the fridge before continuing with the recipe.

Add the beans to the chilli and reheat. Serve with rice or couscous, a dollop of soured cream, slices of avocado tossed in lime juice, a splash of chilli sauce, sprinkling of coriander, and lime wedges, if you like.
