Ingredients:

Oil 1 tbsp
Mince chopped 1/2 pound
Onion chopped 1
Ginger garlic paste 1/2 tbsp
Red chili powder 1 tsp
All spice 3/4 tsp
Coriander powder 1 tsp
Cumin crushed 1/2 tsp
Black pepper crushed 1/4 tsp
Salt to taste
Coriander leaves crushed 2 handful
Puff pastry 3 sheets
Egg 1

Method:

Heat oil, put onion and salt and fry it slightly.
Now put ginger garlic paste and fry more until onion is golden.
Then put mince, cover it and cook it.
Now put red chili, all spice, coriander powder, cumin and salt and cook until water dries.
Now put coriander leaves, fry it slightly and cool mince.
Cut puff pastry into 3 portions, keep filling on it, fold pastry and and join edges with water
Mark cut with knife on edges.
Beat egg and dip puff pastry in it.
Preheat oven on 400 degrees F.
Put puff pastry on lined baking sheet, keep in oven and bake for 20-25 minutes.
Serve it hot.

Chilli beef with broccoli & oyster sauce

Place the beef in a bowl with the soy, five-spice, rice wine, chilli and cornflour, and season with black pepper. Mix well so the beef is completely coated in the thick paste and leave to marinate for at least 10 mins but 30 mins is better. Heat 2 tbsp of oil in a wok until very hot. Add the beef to the wok, but do not overcrowd the pan – the beef needs to be in a single layer. If necessary, cook the beef in batches. Fry the beef vigorously for about 3 mins until brown and crisp and scoop onto a plate. When all the beef is cooked give the wok a quick wipe out. Heat the remaining oil and stir fry the peppers and broccoli for a minute then pour over the stock and add the oyster sauce. Simmer everything together for 1 min then add the beef to the wok and boil briefly to thicken the sauce then serve straight away with rice or noodles.

Season the beef and shape into walnut-sized meatballs. Heat the oil in a pan and cook the meatballs until brown on all sides. Scoop out of the pan and set aside. Add the onion to the pan and cook for a few mins to soften. Add the garlic and mushrooms, and fry for a few mins until the mushrooms soften and start to brown a little. Stir in the tomato purée, paprika and flour for 1 min, then add the stock, bit by bit, to make a smooth sauce. Return the meatballs to the pan, cover and simmer gently for 15 mins or until the meatballs are cooked through. Stir in the soured cream and most of the parsley, and season to taste. Serve scattered with the remaining parsley, with rice, mashed potato or tagliatelle.

Fry the sofrito mix in the rapeseed oil for about 10 mins until it is really soft and the onion is translucent. Do this over a low heat and don’t let it brown. Tip into a casserole.

Sit the chicken on top of the sofrito, add the bay leaf and stock melts and enough cold water to come most of the way up the chicken. Bring slowly to a simmer and then put a lid on the casserole. Cook for 1 hr then check whether the chicken is cooked through – the meat should have started to pull away from the ends of the legs if it is. Carefully lift the chicken out of the pan and let it cool a little then ease the breast meat from the carcass. (Cool and chill the breasts if you want to keep them for another day, or chop them if you want to make a generous batch of this soup.) Strip the remaining meat off the bones and chop it into cubes small enough to sit on a soup spoon.

Taste the broth the chicken was cooked in and if it tastes weak, then boil it for 15-20 mins to reduce it then taste again. Don’t season it until you are happy with the flavour. If you want to chill or freeze some of the soup base do it now and add the rest of the ingredients later when you reheat it. Stir in the peas and sweetcorn (if using) along with the soup pasta and bring back to a simmer. Add back the chicken meat.
