Ingredients

  • Ground beef 500 g
  • Carrot (grated and steamed) 1
  • Capsicum 1/4 cup
  • Green onions 2
  • Green chillies 3-4
  • Potato 1
  • Oil as required
  • Eggs 2 Bread Crumbs 1 1/2cups
  • Salt 1 tsp
  • Black Pepper (ground)
  • Chilli Sauce
  • Buns 6
  • Mayonnaise as required
  • Lettuce leaves 6
  • Cheese Slices 6
  • Pickle Slices 12
  • Tomato Sliced 1

Cooking Directions

  1. Chop all vegetables. Place carrot, capsicum, green onions and potatoes in saucepan for 1 minute until softened.
  2. Add salt, cracked pepper and set aside to cool.
  3. Add eggs, bread crumbs, chilli sauce, green chillies to ground beef and mix thoroughly.
  4. Add the cooled vegetables to beef.
  5. Mix and shape into 6 equally sized patties.
  6. Place oil in pan and fry patties on low to medium heat until golden brown on both sides.
  7. Lightly toast and spread mayonnaise on both sides of bun.
  8. Assemble lettuce leaf, patty, cheese, 2 pickle slices, chillies, and a tomato slice on top of one side of bun.
  9. Place other half of bun on top, cut in half and serve warm.

Rudolph pancakes

Mix the dry ingredients in a bowl with a pinch of salt. Combine the wet ingredients in a jug and gradually pour into the dry ingredients, whisking until a smooth batter forms.

Put 2 tbsp of the batter in a small bowl and mix in a few drops of red food colouring. Transfer to a squeezy bottle.

Put 1/3 of the remaining batter into the other squeezy bottle, and the remaining 2/3 into a jug.

Gently heat a drizzle of oil in a non-stick pan. Squeeze some batter into an outline of Rudolph, drawing two holes for eyes. Fill the rest with batter from the jug. Chocolate & raspberry creams

Mix the raspberries with the brandy, if using, and raspberry conserve, then spoon into the base of 6 glasses. Break the chocolate into a Pyrex bowl, then melt in the microwave on High for 1-2 mins, or place the bowl over a pan of simmering water and stir until melted. 3 Stir the yogurt and custard into the melted chocolate, then spoon on top of the berries. Cover and chill until ready to serve, then top with grated dark chocolate. To make the chocolate macaroons, heat oven to 190C/fan 170C/gas 5, then line a baking sheet with baking parchment. Whisk 2 egg whites until stiff, then gradually whisk in 50g icing sugar until thick and glossy. Mix 100g ground almonds and 25g cocoa with another 50g icing sugar, then stir into the egg white mixture. Divide the mix into 12, wet your hands, then shape each piece into a ball. Place spaced apart and slightly flattened on the baking sheet. Top each with a blanched almond, then bake for 10 mins until firm, but still soft in the centre. Cool. Dust with icing sugar. Can be made 2 days ahead and kept in an airtight container.

Sticky clementine & ginger puddings

Heat oven to 200C/fan 180C/gas 6. Juice one of the clementines and set aside. Peel the other two, reserving the peel. Slice the clementines into thick rounds. Using a teaspoon, scrape away the pith from the reserved peel, then finely chop the peel. Grease 6 individual pudding basins, drizzle 1 tbsp golden syrup into each, add a slice of clementine, then set aside. In a bowl, cream the butter and sugar together until pale, then add the eggs. Fold in the flour, almonds, ground ginger and chopped peel, then fold through the juice and chopped ginger. Divide the mixture between the basins, then cover each tightly with a greased hat or foil. Place the puddings in a roasting tray, half fill the tray with boiling water from the kettle, then cook in the oven for 30 mins until puffed up. The puddings can be made up to 2 days ahead and reheated in a steamer or in the microwave. Turn out onto plates and serve with cream or custard.

Buffalo Chicken Fingers Recipe

Preheat oven to 400 degrees F (205 degrees C). Coat a baking sheet with a nonstick spray. In a bag, mix together flour, 1/2 teaspoon garlic powder, 1/2 teaspoon cayenne pepper, and 1/4 teaspoon salt. On a plate, mix the bread crumbs with the rest of the garlic powder, cayenne pepper, and salt. Shake the chicken pieces with the seasoned flour.
