2 chicken breasts
2 sweet potatoes (400g)
5 tbsp barbecue sauce
75g Stilton

Direction

Scrub the sweet potatoes and cut each into six wedges. Spread out on a baking sheet, drizzle with 1 tbsp oil, season and roast at 200C/180C fan/gas 6 for 20 mins. Lightly bash the breasts between two pieces of cling film until about 1cm thick. Put the chicken in a bowl and coat in the BBQ sauce. Add the chicken to the baking sheet, return to the oven for 10 mins, then crumble the cheese over the potatoes and bake for 5 mins more until bubbling.

Confit pork belly with cannellini beans & rosemary

Score the skin of the pork with a knife, then put in a shallow dish and rub all over with the sea salt, half the rosemary and all the garlic. Cover the dish with cling film and leave in the fridge for at least 7 hrs, preferably overnight. While the pork is being salted, soak the beans in plenty of cold water overnight.

Heat oven to 150C/130C fan/gas 2. Wash the pork well and pat dry. Heat the duck fat and half the vegetable oil in a deep, flameproof casserole dish or roasting tin until the fat has melted, then carefully lower in the pork. Cover with foil and put in the oven. Cook for about 4 hrs or until the pork is very tender.

Leave the pork to cool slightly, then remove from the fat and cool completely. Alternatively, the pork can be kept in the fat in the fridge, covered, for up to 3 months. The fat itself can be reused.

Remove the bones and any sinew or membrane from the pork.

Press the pork between two roasting trays with heavy weights on top (such as cans). This process will shape and compact the meat so that it’s easier to portion. Leave the meat to press in the fridge for at least 2 hrs. You can leave the pork to press overnight (the beans will be fine left soaking in water for up to 48 hrs, but change the water after 24 hrs).

Heat oven to 220C/200C fan/gas 7. Drain the beans and tip into a large pan. Cover with about 5cm of fresh water. Bring to the boil, then cook over a medium heat for 40 mins until tender. Add the butter and the remaining rosemary to the beans, and cook for 5 mins until the beans and buttery water have emulsified. Season well and keep warm.

Take the pork out of the fridge and cut into four equal pieces. Put a large, ovenproof non-stick sauté pan in the oven with the remaining oil and heat until almost smoking.

Place the pork, skin-side down, in the hot vegetable oil (be careful as the oil will spit). Return the pork to the oven for 12 mins until heated through and the skin is crisp and golden.

Divide the beans between four serving plates and top each with a piece of crispy pork. Serve with a crisp green salad.

Melt the butter in a pan, add the mushrooms and cook until softened, about 8 mins. Add the garlic and cook for 1 min more, then stir in the flour, milk, mustard and ketchup. Stir for a few mins until you have a thick sauce, then season well. Shred the chicken and add to the sauce along with the parsley. Top four warm pancakes (see our easy pancakes recipe) with the chicken & mushroom mix and serve.

Cheesy turkey nuggets with smoking chips

Heat oven to 220C/200C fan/gas 7. Beat the egg in a bowl with the Parmesan, crushed garlic and some seasoning, then stir in the turkey pieces. Toss potatoes in the oil, then spread out on a baking tray and bake for 15 mins. Meanwhile, toss the turkey into the breadcrumbs and spread out on another baking tray. Take the chips from the oven and tip in a bowl with the chopped garlic, paprika and sea salt. Mix well, then spread back out on the tray and return to the oven with the turkey. Bake for 10-12 mins, then serve with a salad.

Broccoli lemon chicken with cashews

Heat the oil in a large frying pan or wok. Add the chicken and fry for 3-4 minutes until golden. Remove from the pan and add the garlic and broccoli. Stir fry for a minute or so then cover and cook for 2 minutes more, until almost tender. Mix the stock, cornflour and honey or sugar well, then pour into the pan and stir until thickened. Tip the chicken back into the pan and let it heat through, then add the lemon zest and juice, and cashew nuts. Stir, then serve straight away with basmati rice or noodles.

Heat the oven to 180C/160C fan/gas 4. Lightly oil and line a 20cm deep square tin with baking parchment. Mash the bananas in a bowl until smooth, then stir through the oil, egg and sugar. Fold through the muesli, most of the tropical mix and a pinch of salt. Spoon the mixture into the tin and sprinkle with the remaining tropical mix. Bake for 35-40 mins, leave to cool in the tin, then turn out on to a board and slice into 10 bars. Will keep in an airtight container for four days.
