Recipe Description

Ingredients

  • 2 medium potatoes, peeled and diced

  • 2 tablespoons oil

  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons fresh cilantro, chopped
  • 1/4 cup water

Instructions

Step 1: Sauté the Aromatics

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and green chilies. Sauté for 1-2 minutes until the raw smell disappears.

Step 2: Add Tomatoes and Spices

  1. Add chopped tomatoes, turmeric powder, red chili powder, and coriander powder.
  2. Cook until the tomatoes are soft and the oil begins to separate.

Step 3: Add Potatoes and Cauliflower

  1. Add diced potatoes and cauliflower florets to the pan. Stir well to coat them with the spice mixture.
  2. Add 1/4 cup of water, cover, and cook for 15-20 minutes until the potatoes and cauliflower are tender.

Step 4: Finish and Serve

  1. Add garam masala and stir well. Adjust seasoning if needed.
  2. Garnish with chopped cilantro and serve hot with roti, naan, or rice.
