Directions

Step 1

Dice the lamb into bite-sized pieces. Season with salt, pepper, and half of the za’atar.

Step 2

Heat olive oil in a large pan over medium heat. Cook lamb until browned on all sides. Remove and set aside.

Step 3

In the same pan, add chopped onion and minced garlic. Sauté until onion is translucent.

Step 4

Return lamb to the pan, add water and juice from one lemon. Simmer for 20 minutes.

Step 5

In a separate pot, bring water to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.

Step 6

Fluff couscous with a fork, mix in remaining za’atar, and serve with lamb on top.
