Directions

Step 1

Preheat your grill to medium-high heat. Slice the eggplants into 1/2 inch thick rounds.

In a small bowl, mix zaatar, juice of the lemon, 2 tablespoons of olive oil, salt, and pepper.

Brush the eggplant slices with the zaatar mixture on both sides.

Grill eggplant slices for about 4-5 minutes on each side until tender and charred.

Remove and set aside.

In a saucepan, bring water and a pinch of salt to a boil. Stir in couscous, cover, and remove from heat. Let sit for 5 minutes.
