Directions

Step 1

Rinse the rice under cold water until the water runs clear. Cook the rice in a rice cooker or on the stove according to package instructions.

While the rice cooks, cut the tofu into slices. Mix yuzu juice, soy sauce, sesame oil, and sugar in a bowl. Marinate the tofu slices in this mixture for 15 minutes.

Step 3

In a large pan, cook the marinated tofu over medium heat until golden on both sides.

Once the rice is cooked, mix with vinegar and salt. Let it cool slightly.

Lay a nori sheet shiny side down. Place a layer of rice in the center, top with tofu, shiso leaves, and another layer of rice.

Step 6

Fold the corners of the nori over the filling to form a square shape. Press gently to seal.

Step 7

Wrap the onigirazu tightly with plastic wrap and let it sit for a few minutes before slicing in half to serve.
