Directions

Step 1

Rinse the rice thoroughly under cold water until the water runs clear. Cook it in a rice cooker or on the stovetop according to package instructions.

While the rice is cooking, prepare the hōjicha broth. Boil 1 liter of water and steep 3 tablespoons of hōjicha for 5 minutes. Strain and set aside.

Cut the tofu into small cubes. Squeeze the juice from the yuzu and set aside. Chop the shiso leaves finely.

In a saucepan, combine the hōjicha tea, yuzu juice, soy sauce, and salt. Heat gently, ensuring not to boil, to combine the flavors.

Divide the cooked rice into four bowls.

Top with tofu cubes and pour the warm hōjicha-yuzu broth over the rice and tofu.
