Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

Step 2

Soak hijiki in water for 20 minutes. Drain and set aside.

Step 3

Dice the tofu into small cubes. Peel and julienne the carrot. Grate the ginger.

Step 4

In a pot, heat sesame oil over medium heat.

Step 5

Add ginger and sauté until fragrant.

Step 6

Add tofu and cook until lightly browned.

Step 7

Add carrot, hijiki, rice, soy sauce, yuzu juice, and dashi stock to the pot. Stir well.

Step 8

Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes until rice is cooked.

Step 9

Remove from heat. Let it sit covered for 10 minutes. Garnish with shiso leaves before serving.
