Directions
Step 1
Prepare the pork by gently pounding each piece to flatten. Season with salt and black pepper on both sides.
Step 2
Set up a dredging station with three bowls: flour, beaten eggs, and bread crumbs.
Step 3
Coat each pork piece first in flour, then dip into egg, and finally press into bread crumbs until fully covered.
Step 4
Let the breaded cutlets rest on a wire rack for 10 minutes to help the coating adhere.
Step 5
In a deep pan, heat oil to 170°C. Fry the pork cutlets for 5–6 minutes per side until golden and cooked through.
Step 6
Remove from oil and place on a paper towel-lined plate to drain excess oil.
Step 7
Thinly shred the cabbage and rinse with cold water. Drain thoroughly and chill until serving.
Step 8
Cook the rice according to package instructions and keep warm.
Step 9
Prepare a quick dipping sauce by mixing soy sauce and sesame seeds. Optionally, serve with traditional tonkatsu sauce.
Step 10
Plate the Tonkatsu with shredded cabbage, a portion of rice, and dipping sauce on the side. Serve hot.
