Rinse the rice thoroughly and cook it using your preferred method. Set aside and keep warm.

Thinly slice the shallot and set it aside. Peel the garlic and crush it using a mortar and pestle along with the chilies to make a rough paste.

Cut the chicken into bite-sized pieces and keep ready.

Heat oil in a large skillet or wok over medium heat. Add the garlic-chili paste and sauté until fragrant, about 30 seconds.

Add the sliced shallot and cook for another minute until slightly golden.

Increase the heat and add the chicken. Stir-fry until the chicken is cooked through and lightly browned.

Add soy sauce, fish sauce, and sugar. Stir everything together until the chicken is well coated.

Turn off the heat and fold in the fresh basil leaves. Stir until wilted and evenly distributed.

Serve the Thai Basil Chicken over hot steamed rice.
