Directions

Step 1

In a bowl, mix sumac, lemon juice, olive oil, salt, and pepper. Add chicken, ensuring it’s well coated. Marinate for 20 minutes.

Heat a skillet over medium heat. Add marinated chicken and cook for 6-8 minutes on each side until golden and cooked through.

Step 3

Remove chicken from skillet and let it rest. In the same skillet, add garlic and sauté for 1 minute.

Add couscous to the skillet, stirring to toast slightly. Pour in 2 cups of water, bring to a boil, then reduce heat and cover.

Step 5

Simmer couscous for 10 minutes or until water is absorbed. Fluff with a fork and mix in pomegranate seeds, parsley, and mint.
