Directions

Step 1

Rinse the rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer’s instructions.

While the rice is cooking, prepare the filling. Pit the umeboshi and finely chop them. Set aside.

Once the rice is cooked, let it cool slightly. Wet your hands with water and sprinkle with a little salt.

Take a handful of rice and form it into a ball.

Make a small indentation in the center.

Place a piece of umeboshi and a shiso leaf inside.

Cover the filling with more rice and shape it into a triangular form. Repeat with remaining rice and filling.

In a bowl, mix kinako and sesame seeds. Roll each rice ball in the mixture to coat evenly. Optionally wrap with nori and serve.
