Directions

Step 1

Soak the saffron in 2 tablespoons of warm water for 10 minutes.

Step 2

Season the chicken with salt, black pepper, and half of the lemon juice.

Step 3

Heat olive oil in a pan over medium heat. Add the chicken and cook until golden brown on both sides. Remove and set aside.

Step 4

In the same pan, add chopped onion and garlic. Sauté until the onion is translucent.

Add rice to the pan, stirring to coat with the oil. Pour in 4 cups of water, saffron water, and remaining lemon juice. Stir well.

Step 6

Return the chicken to the pan, cover, and simmer for 20 minutes. Add almonds and cook for an additional 5 minutes. Serve warm.
