Directions

Step 1

Preheat rotisserie oven or grill according to manufacturer’s instructions.

Step 2

Pat chicken dry, rub with olive oil or butter, and season all over with salt, pepper, paprika, garlic powder, onion powder, and optional herbs.

Step 3

Skewer the chicken on the rotisserie spit and secure wings and legs.

Step 4

Cook for 75–90 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (75°C), and skin is golden brown.

Step 5

Remove from spit, let rest 10 minutes, carve, and serve hot.
